What’s better than a berry pie? A berry berry pie!

You’re probably wondering what in the world that means. Well, it means that we used two types of berries in this amazing pie recipe and we couldn’t be happier about it. Blueberries and strawberries were both tossed into a buttery pie crust and topped with an even butterier lattice crust. My husband and kids raved over this yummy berry pie and said that it tasted even better when eaten with ice cream. I have to say, ice cream does kick the flavor factor up a few more notches.

My son’s birthday happens to fall on Memorial Weekend every year.

So, we basically get to have a party for him and for the holiday all wrapped into one. It was only a few years ago that he even realized that it was Memorial Day. I often wondered if we would get such a big crowd showing up if it wasn’t a combination of events. Either way, we always have a nice turnout and good time. This year, we decided to skip the whole birthday cake thing. The kids usually eat the ice cream and the cake goes to waste.

My boy has recently decided that he loves cheesecake, and I happened to see this recipe for a patriotic version on Facebook and decided that’s what we were going to do. Adults usually reach for a piece of cheesecake before they do the regular cake.

This went over so well, there wasn’t a single crumb left on the plate. I think everyone that wanted some got some so at least that was good. Next time I just might have to make up two of these!

These Chocolate Strawberry Cheesecake Chimichangas are a delicious sweet treat for parties or home snacking, and by the time you say the name, you can be about done making them. I have to say, I wouldn’t have thought of making a chimichanga into a dessert item, but it works beautifully here. It’s not only sweet and creamy – it’s so quick and easy, too! You’ll literally whip this up in no time, which means more time for you to kick back and relax.

 

Not bad for only seven ingredients, eh? It’s such a breeze to make, and with the combination of strawberry cream cheese and cinnamon sugar, it has the perfect flavors for all seasons. It also is very easily expanded, should you have an extra-large group to feed.

Sometimes, you just want a simple dessert to cool you down.  This Strawberry Ice Box Pie makes for a tasty, cooling, and refreshing treat with relatively little hassle. Just a very short spell of baking, and then it is a matter of letting the food processor and freezer do their work. Sounds perfect, doesn’t it?

 

Fall is fast approaching, but it still is rather warm in my neck of the woods.  I had a hankering for something simple and on the cool side and decided to give this strawberry ice box pie a go.  I do love my strawberry flavor, and it is nice to be able to put together a tasty dessert without having to spend too much time with the oven on. Needless to say, this thing was gone in a heartbeat!

Classic cheesecakes can be delicious, but they have a reputation for being fairly heavy.  If you want something similar that is a bit lighter and more warm weather-appropriate, you should give this Roasted Strawberry & Ginger Ricotta Cheesecake a try.  It has a delicious and decadent flavor without weighing you down.

 

I am a devout cheesecake lover, but even I have to admit that cheesecakes can be extremely heavy, especially if they have the rich toppings and crust that I like the most.  I thought that I would give a ricotta cheesecake a try.  I have to say, I was very pleased.  It was rather light and fluffy, allowing me to enjoy all of those delightful sweet and piquant flavors without getting too bogged down after a few bites.  (And who wants to get bogged down on a hot late-summer day?)

The best part about frozen cakes is that you can make them ahead and spend more time with your guests!

 

I love strawberries and love cheesecake, so a recipe like this is a great dessert for me. I love that crust and everything in it, and it didn’t require much time or effort on my part to put together. Most of the time involved is just in waiting for the freezer to work its wonderful magic. That leaves you free to do plenty of other things in the meantime.

Oh, Strawberry Heaven! Yummy!

These Strawberry Brownies are ultra-delicious, and you won’t believe how quick and easy these are to put together! These treats really come into their own in events like children’s birthday parties, but they are sure to be enjoyed by sweet-lovers of all ages. They look simply beautiful – everyone always falls in love with the color first, and after their first bite they are completely sold. I do enjoy a good brownie, even the more traditional ones.

A friend of mine regularly makes a batch of fudge brownies for the tailgate that I go to, and the adults love them even more than her grandkids do!

But, hey, variety is the spice of life.  I tried these, and boy, was I glad that I did. A bit of a warning for you, though – you’d better make a double batch if you want to save a bite for yourself, too! These will be gone in a heartbeat.
