My husband and I have always loved Italian food.  It is certainly our weakness and what we live for.  Every week, we try to eat a bit healthy and at home Monday through Friday, but on the weekends, we live for eating out and getting to try new places.  Ever since before we got married years ago, we started a list of the places we wanted to eat at.  You know what I mean, it is just a simple list with restaurant locations.  Now, what amazes us is that we have kept it up for so many years even after kids and grand kids.  We still have that original list and constantly add new places and cross out the ones we have visited.

Well, that list is majorly Italian if I do say so myself.  I mean we love our carbs and cheese, plain and simple.  What better than a big bowl of cheesy pasta to spend the night away with friends? One of our favorite places to go with our kids or just double date with another family is The Cheesecake Factory.

There, we technically could share because the portions are so large, but we always get our own dish so we have leftovers. It is just that good!

A Healthy, Creamy, Yummy Casserole

Casseroles are rather convenient and often very flavorful, but not all of them exactly have a reputation for being extremely healthy.  If you are looking for a health-conscious, veggie-heavy casserole with rich flavor and creamy texture, this Healthy Spinach & Artichoke Casserole is an excellent choice! This is also a great way to make your kids eat their greens – with a recipe like this, it’s not going to be a problem!

 

I like spinach raw, in generous amounts in salad, and boiled artichoke with some salted butter is a nice treat, to me.  Not everyone is so keen on these vegetables in their basic or raw form, however, and after a while, they can be boring to eat by themselves.  Easy solution: mix them together with some cheese and bake them in a casserole.  Yummy!

Quick tip: You can make this ahead by freezing the dish assembled and bake from frozen, increasing baking time by about 15 – 20 minutes.
