When it was time to have my bridal shower a few years ago, I was overwhelmed with all there was to do.

Thankfully, I have a very organized and detailed sister that was playing the role of maid of honor, and she took on a lot of the planning for me. One idea that she had that I just loved was having the party in the morning, instead of waiting around all day for it. At first, I was worried that people weren’t going to come, but everyone told me how they thought it was such a good idea.

Showers are fun, but you don’t always want it to take up your entire day… and I get that. We had the party start at 11 in the morning, so it opened up a whole new list of options as far as food that could be served too. We decided to go with brunch items instead of a luncheon.

One of the dishes that my sister made were these sausage and cheese breakfast squares that she had found on JFacebook. They were so tasty! As soon as she brought them out to the shed where we were having the party, I asked if I could have one. “Go ahead, it’s your party!” They were so good, I had to walk away before I ate the whole pan!

I think you should make two loaves… It’s so delicious, it’ll be gone in a heartbeat!

What every family needs is a good meatloaf recipe, and this one is the best I’ve found so far. I’m saying “so far” because I’ll probably keep trying new ones for as long as I live.

It’s not that I don’t think this is good enough – in fact, it’s just the opposite. I think this meatloaf is so tasty that it’s going to be hard, if not impossible, to top this. But that’s exactly why I occasionally search for new recipes. If I get lucky, some day I’m going to end up with another one that is even more delicious!

That’s exactly what happened to me with this recipe. I had made plenty of meatloaves before; I love the stuffed ones, and also the mini meatloaves (those are the kids’ favorite) but as soon as I realized you could cover your whole meatloaf with bacon, I knew it was going to be awesome.

You can choose turkey bacon if you want to make this a bit leaner – but personally I think you should always go for the real thing! Choose your favorite brand or try special flavors each time.

Quick Tip: Instead of making one big meatloaf, make several smaller ones and wrap them in bacon. Adjust the baking time accordingly!

I have a confession- there are times when I just want to stay in bed all day without the need to get up. It’s not about being lazy; not at all; it’s more of the feeling of comfort your bed can provide. I love to spend my weekend mornings with my family in bed. Since the twins have that cute habit of waking up early and then sneaking in our bedroom while we’re still asleep, we all get to cuddle together in the morning. Weekend mornings are the best ever- I won’t exchange it for anything else.

Sometimes, the husband wakes up early to cook breakfast for all of us. But instead of calling us about the food getting ready, he brings the breakfast to bed. We share our breakfast together in one large plate while we’re still in bed.

This morning bond with the family makes me want to share with you a breakfast recipe that I was able to make a couple of days ago. It came from the website called Our Table For Seven, and it’s called B & B casserole. It’s a breakfast casserole that has everything you want on it- meat, cheese, and eggs.

This casserole is full of basic yet flavorful ingredients that you can find inside your pantry. You don’t need to stress yourself over this- you just have to enjoy eating this with your family.

Gravy is something that in my culture, was always unappreciated. We never make gravy, nor cook with gravy. The most we do is make a little sauce with water, garlic, lime, sliced onions and maybe some of the starchy water from yucca or potatoes to really flavor it. We add that over everything from pork chops to ground beef, to our stews and even over baked potatoes or yucca. It really is tasty, just not real gravy if you ask me. I always wanted to try gravy, but coming from another culture neither my mom or grandma knew how to make it. I knew I had to take matters into my own hands.

 

After finding what seemed like a pretty simple and straightforward recipe on Pinterest, I knew I had a winner. It was called Grandma’s Favorite Gravy so it was bound to be good! I went out and bought all the ingredients needed to prepare this. Then I went home and got started. Halfway through, I realized I had no idea how this was supposed to taste, so I could not be a good judge of it. I called my neighbor Anne, and as always, eager to bite into my recipes, she tried it. She said it was the best gravy she had ever enjoyed and that I had to keep this recipe for all future events!

A food miracle, that’s what! These adorable little snacks are perfect for noshing on at any time of the day. I know that my kids love them after school and even in the morning before getting on the bus. Cozy pigs are super easy to make and only consist of 2 ingredients!

 

These little fellas will make you (and your family) feel like you’ve been slaving over a hot oven for hours. When in all actuality, it’ll probably take you no more than 20 minutes from start to finish to put cozy pigs together. Isn’t that name just too cute? We love it! My mom used to call them “pigs in a blanket.” What’s your special name for this recipe?
