What’s your favorite side dish? I’m sure we all love a wonderful potato dish but those can be a little tricky for us who are trying to avoid having too much carbs.

It’s the same thing with pasta noodles and rice – I really enjoy both of them but I wouldn’t want to have them every single day. However, there is a delicious and healthy alternative that you may not have heard of! And it’s so simple to make you won’t even have to turn the oven on!

Cauliflower rice (or rice cauliflower, as some call it) is absolutely delish and a great low carb option that pairs really well with almost any entree. I had heard of it quite a while ago already, but somehow I had completely forgotten about its existence. Until last week, when I was searching for new side dish and my friend mentioned this one to me. It seemed so easy to make, I just had to give it a try. I’m so glad I did!
