This Pie Is So Good, It’s Almost Surreal

You can say what you want but to me, banana cream pie is always going to be The Number 1, ultimate dessert. My mother used to make it on Sundays; I can still remember the feeling of anticipation when we were driving home from church, getting ready for our weekly family brunch, and we would always have pie, too.

It was either chocolate pie, apple pie with double crust, or banana cream pie. Needless to say, the nanner pie was my favorite! I swear, I could have eaten the whole thing on my own – actually, I’m pretty sure I tried that once when I was very little, but someone found out about my plan before I could execute it.

Which brings me to this question; now that I’m all grown up, why haven’t I made this pie just for myself? Even for once? I’d probably feel guilty for not sharing it with my family – although, they won’t be sad if they don’t know about it, right? You did not hear me say that.

We’re sorry to ruin your diet.

There comes a time in a woman’s life when it’s ok to just enjoy a delicious, creamy dessert without having to feel guilty about it. Actually, I think we should never feel guilty about dessert, but somehow my favorite dress doesn’t always agree with me on that one. I’ve made a deal with that dress; I try it on once a month. If it fits, I eat as many desserts as I like. If it doesn’t, no dessert for me for the next 4 weeks.

Sounds kind of rough but surprisingly, I haven’t had to say no to desserts for a long time! I guess trying it on, on a regular basis, works on an unconscious level or something. I don’t know – I’m not an expert on psychology. But I am an expert on desserts, if I say so myself!

This coconut cream pie here is one of my all-time favorite desserts. It’s easy to make (especially if you’re using store-bought pie crust), it tastes amazing and it’s perfect for pretty much any occasion.

I Can’t Get Enough Of This Traditional Dessert!

Every year I look forward to our trip to a nearby apple orchard. I do love the apples, too, but what I’m most excited about are the peaches. I swear you’ll never see peaches this big and juicy anywhere else in the world!

For starters, I eat about a dozen of them before I even start thinking about what to make. I love homemade, canned peaches (with a secret recipe for a special spice mixture I got from my mother), but nothing beats a good, old-fashioned, double crust peach pie. My mouth is watering just thinking about it!

I always make half a dozen pies to begin with, and bring them to my friends and neighbors. One of my favorite neighbor’s kids call me The Pie Lady – and I’m quite proud of that nickname! A slice of this pie is pure heaven on Earth, and if you add a scoop of vanilla ice cream on the side, I really can’t imagine anything better than that.

Don’t worry if you don’t have the time to make your own pie crust. You’ll do just fine with store-bought pastry!

Coconuts. Man, I used to hate them when I was little! I live in coconut paradise: Miami, Florida. We practically have fresh coconuts to enjoy year round, and everyone takes advantage of it. When we traveled, it was always to the Dominican Republic and that is where coconuts are famous. You just sit on the beach, relaxing and a guy who sells coconuts will stop by and if you want one, he will crack it open, peeling the skin back until it is just barely open, and the pop a straw right in. It is pretty cool.

 

Nowadays, I am more of a coconut fan. To be honest, I still do not like to drink the juice (although the little coconut preparing bit is awesome!) but I do like shaved coconut flakes, or coconut flavored foods. That is why I am thrilled to share this recipe with you. This creamy coconut pie reminds me of summer days on the beach, basking in the sun and splashing in the ocean. So if you are missing those summer days on this cold winter morning, feel free to make yourself this pie, turn the heater on, and watch a beach movie while you take bite after bite!

I’m going to go on a limb here and say that this pie is better than doing the horizontal polka dance with your lover. Seriously, this pie is THAT good. You literally make love to your taste buds when you eat this delicate confection of creamy chocolate, whipped topping, and cherries.

I’ll just sit back and wait until you make this black bottom cherry pie for yourself and give it a try on your palate. You’re going to want to make extra of this dessert as it’s going to go fast! Normally when people hear about a meringue pie, they automatically think of the popular lemon version.  But you can make a meringue out of anything, and in this decadent dessert recipe, it just so happens to be our favorite: Chocolate!

This dessert is ready in 30 minutes and serves about 8 people.  Top with a dollop of whipped cream and some chocolate shavings.  You’ll be the hit of the party with this creamy dreamy recipe.

You guys, I have something incredible to share with you. I can’t believe I hadn’t thought of this until now! Everyone knows how delicious cinnamon rolls are – we love having them for breakfast, dessert and I would say lunch and dinner, too!
