You Won’t Believe How Lean This Savory Pie Is!

I don’t think I’ve been this happy about a recipe in weeks!

I think I’ve mentioned before that I’m trying to find ways to keep my breakfast dishes interesting, easy to prepare and absolutely delicious. I have one more requirement to add to that list; I want it to be lean and as healthy as possible. Well, friends, I think I’ve hit the jackpot with this one!

I was trying to figure out a perfect word to describe this vegetable pie, but I can’t think of just one that would immediately reveal all its aspects. But I do want to say it’s fabulous, pretty, lean, healthy and oh, so tasty you just want to keep eating! And I haven’t even mentioned yet how unbelievably easy it is to make. No need to bake the crust first – or do anything else time-consuming. If you’re using frozen broccoli and cauliflower, you won’t even have to chop and boil them first!

There is always that moment when you’re just talking to someone and then suddenly you see something and voila—you’re brought back to an incident that happened years ago. This happened to me a few days ago when I was having dinner at a friend’s house. A memory was triggered by food (of all things, food!) and it made me melancholic for the rest of the night. I was enjoying my plate of baked ziti and garlic bread when one of my friends joined me on the couch. She was eating a sort of muffin that looked quite familiar yet I couldn’t seem to be able to place it. It was only when she allowed me to take a bite that I remembered something.

 

When I was a kid, there was this weird boy in class who was so quiet everyone thought he didn’t speak. He was new in school that year so he didn’t have any friends and no one wanted to talk to him. One of my friends finally approached him. She came back with a muffin in hand and told us the boy didn’t want to be bothered. The boy gave the muffin to her thinking she just wanted his lunch. It tasted like salmon. The boy could have been our friend, but we never had a chance to make him one. He left school a month later and we never heard from him again. We’ve been wondering about him ever since.

Sometimes all you have to do to make someone feel better is to give him or her a warm smile. And maybe a slice of pie too just for the heck of it. When we were kids, whenever Mom noticed that we were feeling down, she would always bake a pie for us. Sometimes, it was a meat pie, but most of the time, it was a fruit pie. She said that pies made things a whole lot better at times. Then she would smile and give us both a kiss on the forehead.

 

Whenever my brother feels lonely and tired, it’s so obvious. It isn’t just the bags under his eyes, it’s also in the way his shoulder hunches and the way he smiles at people. However lately, he has seemed much happier and more energetic. And I know why. I always witness it whenever I visit them. When he comes home, his wife and his daughter always come running towards him to greet him. His wife will cook his favorite meat pie even when she too is tired from work while the little princess takes care of the gestures of care. My niece always gives her father the brightest smile, the strongest embrace, and the sweetest kiss. I can instantly see how these gestures brighten up his day.
