I absolutely adore creamy cucumber salad as a side dish to any picnic meal. Nothing beats a burger fresh off the grill with a side of this salad on your plate. When I was growing up, my mother would make this crunchy salad all the time; however, she never included this one ingredient. Would you like to know what it is?

 

Tomatoes! Yep, red, ripe, juicy tomatoes. You wouldn’t believe the kick that adding in this extra veggie gives to this salad. I’ve always been a believer of the saying, “If it’s not broke don’t fix it,” but adding tomatoes to creamy cucumber salad is definitely the missing link we’ve all been waiting for.

This freezer meal is a secret every busy mother should know.

We all have had those days where we feel too lazy to cook a meal or just don’t have time at all. This creamy and heavenly palatable enchilada goodness can save the day. The aroma of this mouth-watering dish can already make you feel full.

“The enchiladas are loaded with cheese! I add in spinach too make them somewhat healthy:) I mix the spinach mixture with sour cream or Greek yogurt to make the enchiladas extra creamy. The enchiladas also have Old El Paso Green Chiles and Green Chile Enchilada Sauce! Whether it’s for a Super Bowl party or a snack for your family to munch on, Crock Pot buffalo chicken dip is divine! This spicy treat pairs well with Doritos, Tostitos, or any sort of taco chip. We like to place the dip into Aztec flour tortillas and eat it on taco night. Just add some lettuce, Pace salsa, and a dollop of Daisy sour cream for a complete Mexicana meal!

This appetizer is totally simple to make. All you do is toss your ingredients into the Crock Pot and set it on low for a few hours. Give it a few stirs every now and then and that’s it! Soon, you’ll be diving into this savory dip with your favorite chips. If you should happen to have any leftovers, we’ve heard the dip tastes better the second time around. However, we’ve never experienced that because our buffalo chicken dip get’s wolfed down on the first go.

Summer is just around the corner and with that comes garden fresh vegetables like cucumbers. We typically have an overabundance of cukes here on the farm so naturally, we make lots of creamy cucumber salad! This cool and herby salad is a huge hit as a side dish during dinner or served alone as an entree at lunch. Both young and old always enjoy slapping a healthy helping of this favorite summertime salad on their plate.

One of the best parts of making this dish is that if you’re like us, you’ll have most of these ingredients growing in your backyard. If you have always thought about maintaining a garden but have never done so, now’s the time to take the plunge. Just think of all the amazing cucumber salad you’ll get to have!
