This Tuna Noodle Casserole Is To Die For

One of my absolute favorite meals growing up was the simple and humble pasta and tuna dish my mom would make. It was just a mix of pasta, tuna, mayo, salt and pepper and then maybe a squeeze of lime. It was so simple, I think I learned to make it when I was about 10. It was too easy to make and kid proof, really. I think I ate it at least once a week. It was straightforward and fun and honestly, just a really good meal after a swim or tennis match.

 

The other day, I was browsing Pinterest and came across this recipe. Tuna Noodle Casserole. Hmm, it sounded SO strange to me. I thought it would be gross and weird, but after giving it a try, I realized it resembled my favorite old food of pasta and tuna. It was an easy and fun treat to make that was so reminiscent of the food of my past. I was so excited after trying it that I ran over to my mom’s house and took some to my siblings. They didn’t want to try it because they thought it was weird, but after a bit of prompting, they did and realized it is delicious!

If you want a meal that is quick, easy to make, and a bit, well, out of the ordinary, Asian dishes are the way to go. This Chicken Chow Mein recipe is a lot easier to put together than you might think, and it works nicely as a side dish, a main course, or even a full meal, depending on your needs. And as with most any stir fry dishes, this chow mein is a rather versatile recipe. If you have some extra veggies you need to use, or you just like to tweak things to your tastes or experiment a bit, most anything goes. The recipe is really yummy as-is, though, and I certainly would make it again.

 

Traditionally, stir fry recipes such as this are made in a wok, though any large skillet will do if you don’t have a wok available. You will work with the same basic formula, whether you use this exact ingredient list or tweak things a bit; it’s a matter of making a bunch of things separately and then combining them into one big dish at the end.

This French Onion Chicken Noodle Soup Casserole is a simple but filling recipe that makes for good comfort food on a hectic weeknight. It requires just half a dozen ingredients and takes just half an hour to cook. Now, I don’t know about you, but I think a 30-minute meal is the bees knees!

 

Chicken noodle soup is practically the definition of comfort food – or the definition of comfort itself, for that matter. How many Chicken Soup for the Soul books are there now, 200 or thereabouts? Of course, you don’t want the same thing all the time. This casserole takes the classic yummy flavor of chicken soup and gives it a nice, refreshing twist. The best part is, this recipe works as a great base for any alterations, which you can make easily!

Beef Stroganoff may have a fancy name and hearty, filling flavor, but it isn’t that difficult to put together. Your slow cooker makes it even easier. Mother often used beef stroganoff as a go-to meal for hectic midweek nights. My husband is a good cook, but he would rather not spend his evenings in the kitchen.
