I am always in the mood for some comfort food.

And for me, that includes a nice warm, creamy casserole. I made this as a play on my mom’s tuna noodle casserole.

My husband and kids really enjoyed it. It’s one of those easy-to-make casseroles when you are faced with a busy schedule. You know, the days when you have one child going to soccer practice and another meeting with the chess team or whatever it is that your kids do.

You find yourself running all over the place and by the time you get home, it’s time for dinner and you haven’t anything out or ready to make. Bummer!

Cheer up buttercup! This bacon, mushroom, and noodle casserole is the answer to your prayers! It’s very easy to make and guess what?

Bacon only takes about 20 to 30 minutes to thaw on the kitchen counter if you have a package that is frozen.

Are You Struggling With Your Grocery Bill?

We all know how expensive food can be these days, and I doubt it’s going to get any cheaper. When you’re cooking for five people (or even more) you will quickly notice how things add up. I am always on the lookout for recipes that will help me save a few bucks each day. I have plenty of use for an extra hundred dollars, instead of spending it all on food!

Don’t get me wrong; when it’s a special occasion I like to pamper myself and my whole family with meals that are out of the ordinary and may even cost a little more than usual. But I just don’t want to spend a lot of money on weekday meals, especially if I can make something totally mouth-watering with a fraction of the cost!

Most stews are like that and this time of year I make them very often. This outstanding beef bourguignon is a meal I would be happy to serve to even the finest dinner guests. The flavor is mindblowing and by tasting it, you wouldn’t believe how little it costs to make this!

Quick Tip: How to make this dish even more inexpensive; use less meat and add more vegetables, omit the wine and add more beef stock instead, serve over rice to get more servings out of one batch.

Hands Down, The Best Meal Ever Made In A Casserole Dish!

Oh boy, oh boy! This is one of those meals you could eat ten days in a row, and you’d still want to make it again the next day. Chicken tetrazzini casserole is a dish I’ve made for my family almost every week since the beginning of times, and they are still crazy about it. Even my picky eater always goes for a second serving, and wants to know if we’re having this again soon!

Don’t be startled by the lengthy list of ingredients. The cooking instructions are very straightforward, and even though some effort is required to make this tasty chicken tetrazzini casserole, it is most definitely worth it!

It’s creamy, cheesy, juicy and mouthwatering, with a wonderful crispy crust made of bread pieces and cheese. I guarantee this recipe will be added into your dinner rotation, too! I had barely had my first bite of this when I already heard my husband say; “I sure hope we’re having this again soon!”

I would recommend you double the ingredients and make this in two casserole dishes. It freezes well – or maybe you’d just like to have plenty of leftovers, to eat this the next day, too. I sure know I did!

The Fastest Disappearing Side Dish You’ll Ever See!

Don’t you just hate throwing food to waste? I really do. I grew up watching my grandmother make use of every ingredient she had on hand, whether it was leftovers or something from her backyard garden. She never threw anything away, unless for some strange reason she had missed something and it had gone bad already. Even then, she always shook her head, as if she thought she should have been more careful.

I understand why she did this; she lived through some hard times when she was young, when money was tight and they didn’t always know if they’d have anything to eat the next day. Even when she got older and could have bought all the food she could eat, she never changed her ways.

Which was also a great thing for the environment, you know! There’s all this talk about food going to waste and how we should pay attention to what and how we are consuming. That’s why I love recipes like this vegetable fried rice from The Woks Of Life! That leftover rice in your fridge? It’s perfect for this, and you don’t have to throw anything away!

Bacon Makes Good Things Even Better

I know I said Tailgate Touchdown in the headline but I might as well have said Morning Routine Touchdown! These egg and bacon muffins have saved my life on so many occasions, I’ve lost count. We all know what it’s like now that the kids are back to school and you’re trying to get them out of bed, comb their hair (or at least brush their teeth) and eat a little something before you rush them out the door. It’s not always easy, or fun, but these guys are here to help you!

These muffins are so easy to make ahead for those crazy times, and even if you’re not making them ahead, they’ll be ready in 30 minutes. Now, that’s what I call fast food! These are not only great for breakfast, but also awesome for anyone who needs to quickly grab a snack or lunch for work.

You can hide all kinds of yummy things inside these muffins! Little bits of cheese, broccoli, grated carrots, you name it! I usually just add mushrooms but the kids love these with spinach.

Argo cornstarch, bacon strips, Bacon-Wrapped Meatloaf, baking powder, baking soda, barilla pasta, basil, beef, bell pepper, Bertolli extra-virgin olive oil, Bertolli Olive Oil, black pepper, Bob's Red Mill, Borden, brown sugar, Campbell’s soups, casserole, Chiquita, Clabber Girl, College Inn, Cool Whip, crock pot, Daisy sour cream, dessert, Dole, domino sugar, eat, Eggland's Best eggs, Eggland’s eggs, food, garlic, Gold Medal flour, granulated sugar, Green Giant, Hershey, Hodgkin’s Mill, Jell-O, Jif peanut butter, Johnsonville, keebler, kosher salt, Kraft, land o lakes butter, Libby, McArthur milk, McCormick spices, Morton salt, mushrooms, onion, Oregano, Pam Cooking Spray, parmesan cheese, pepper, Pepperidge Farm, Philadelphia cream cheese, Powdered sugar, recipe, red pepper flakes, Ritz crackers, salt, Sara Lee, Sargento, sausage, seasoned breadcrumbs, slow cooker, Thorn Apple Valley, Toll House, TruMoo milk, tyson, vanilla, vanilla extract, Vlasic, Wesson vegetable oil, whipped topping

I think you should make two loaves… It’s so delicious, it’ll be gone in a heartbeat!

What every family needs is a good meatloaf recipe, and this one is the best I’ve found so far. I’m saying “so far” because I’ll probably keep trying new ones for as long as I live.

It’s not that I don’t think this is good enough – in fact, it’s just the opposite. I think this meatloaf is so tasty that it’s going to be hard, if not impossible, to top this. But that’s exactly why I occasionally search for new recipes. If I get lucky, some day I’m going to end up with another one that is even more delicious!

That’s exactly what happened to me with this recipe. I had made plenty of meatloaves before; I love the stuffed ones, and also the mini meatloaves (those are the kids’ favorite) but as soon as I realized you could cover your whole meatloaf with bacon, I knew it was going to be awesome.

You can choose turkey bacon if you want to make this a bit leaner – but personally I think you should always go for the real thing! Choose your favorite brand or try special flavors each time.

Quick Tip: Instead of making one big meatloaf, make several smaller ones and wrap them in bacon. Adjust the baking time accordingly!
