I love Italian food. Ahh, how I love a good pasta dish, full of sauce, hearty with meat and with loads of cheese over the top. It is just the epitome of a comfort dish. Any pasta dish can really be transformed into something amazing. Some of my favorites are ravioli and tortellini. I so easily take these and elevate them to become a better, fuller versions of what they are. Say, add a combination of two sauces, add some different spices, or try out a different cheese.

The options are endless when it comes to pasta and you can get as creative as you would like without ruining anything! Recently, I decided to make lasagna in the crock pot. I had found a recipe and though it was the coolest thing so I gave it a go. Well, when it was time to make it, I realized I did not buy the right noodles.

Actually, I forgot to buy them altogether. I was a bit disappointed, but then realized I could probably still make a great dish with these ingredients and some of the other pasta in my pantry. I searched for a good recipe with those ingredients and found this lasagna soup.

So Bright, So Light, So Delicious!

I love Mediterranean food. For example, most of the Greek dishes are very healthy, with fresh, pure and lean ingredients. Not to mention they are absolutely delicious! These stuffed bell peppers always remind me of my trip to one of the Greek islands, and I love the fact that I can now make something very similar right at home.

Although this recipe originally called for green bell peppers, you can use any color you prefer. When I’m making these for a larger crowd, I usually buy red, yellow and orange bell peppers as well. They look so pretty together, with all those bright colors!

This recipe is also perfect for anyone who wants to eat a little lighter. Choose lean ground beef or ground turkey, as well as whole grain brown rice. You can also use reduced fat cheese to cut down on those calories. These will still be delicious!

Quick Tip: Add some red pepper flakes to the rice/meat mixture for a bit of a kick!

My son is very picky when it comes to food. Sometimes it drives me crazy to try and figure out what to cook, besides the hotdogs that he would eat. He likes instant noodles a lot and that is why I have been looking for something with noodles, to satisfy his “delicate” appetite. A nice, hearty casserole sounded like a very good idea, now that we’re into the colder months of the year.

I found this Chicken Noodle Casserole recipe and it is such a lifesaver! My son actually loves eating it and it’s one of his favorite dishes now. I am just so happy that he is eating something that’s good for him, and something that he actually loves. The Rotisserie Chicken, as recommended by Holly, really works wonders with this recipe. You can also use leftovers from a previous meal since the recipe needs pre-cooked chicken. You probably won’t believe it but you only need five minutes to prepare this dish!

Finally! The Secret To Great Goulash Is Revealed!

It may vary a bit from the traditional recipe, but this goulash by Paula Deen is yummy for people of all ages, good for your next potluck or for a nice family meal.  It requires minimal prep (maybe 15 minutes’ worth) and cooks in about an hour and a half. What the Crock-Pot offers in convenience and versatility, a solid, well-seasoned Dutch oven offers in style, durability, and quality of cooking.  For those one-pot meals that require a moderate to high amount of heat, you can’t go wrong with a Dutch oven.

It holds the heat well and distributes it evenly, making your job as cook quite a bit easier than it otherwise would be.  My Dutch oven has been in my mother’s family for several generations and is still going strong.

I can’t say that I have ever had goulash in it before now, though–at least not that I can remember.  When I came upon this recipe, I figured, why not give it a try?  Hard to go wrong with ground beef and macaroni, right?
