Quick Tip: Instead of using a loaf pan, cook your meatloaf in a 9×13 pan to allow browning on all 3 sides, rather than just the top! Also, the grease drains away easily.

Tacos are one of those meals that are quick and easy to put together. Quesadillas are another one of those things that are quick and easy to make. So why not combine the two into something really amazing?

Luckily for us, Ree Drummond, over at The Pionneer Woman Cooks, has done just that. She’s combined two delicious menu items into one – Taco Quesadillas. And are they ever amazing. Richly seasoned taco meat with rich cheese and topped with fresh and spicy pico de gallo. These quesadillas are just as quick to put together as tacos, but they give a whole new twist to an old favorite. Ree makes a really simple and delicious meal. Add all the fresh sides you can and you’ve got a “one dish” meal that’s new and refreshing!

Everyone has those meals that are go-to meals for when you need something really delicious in a hurry. This savory cashew chicken is perfect for just such an occasion. It’s succulent and juicy chicken with water chestnuts and green bell peppers. Everything is topped with a juicy and delicious sauce flavored with the traditional soy sauce and the spicy sweet oyster sauce.
The best part of this meal is that it comes together in a snap! Once you mix the sauce ingredients together, cook the chicken while chopping up the vegetables. It’s also just long enough to cook up some Lo Mein noodles to serve with the cashew chicken.
The tender chicken is cooked in the delicious sauce for a couple of minutes, so the chicken absorbs the flavor of the sauce. Combine this with the water chestnuts, bell pepper and crunchy cashews, it’s a definite winner!

There’s little better than a nice bowl of chili to warm you up on a cold day. This recipe is a bit non-traditional, but it is satisfying and rather quick and easy to put together. I could eat chili most any time of year, though many people like to save it for the colder months. As often as I cook chili, though, I am on the lookout for creative variations on the traditional recipe, and this is a nice one.

I’m pleased to report that this chili is a vegan wonder, but you can easily beef things up with any type of meat you have handy. I’ve made it at least four times over the past few weeks with different fillings, and it never disappoints. Try simmering it with top round steak, ground turkey, shredded chicken, lightly browned chorizo or some spicy chicken sausage. (The Dude really lost his cool over the chicken sausage version.) Feel free to get creative.

I am a huge fan of Asian cuisine. I love all the exotic flavors, spicy dishes and the healthy, fresh ingredients.
