When I was about 4 or 5 years old I remember my Sunday School teacher making the best treats ever. She would bring all the little kids a little something to munch on while she taught her class and once a month, she would bring a real special treat. Usually that consisted of cookies, cinnamon rolls, or even pizza every now and then. But one day she showed up with an amazing cake. She did not tell us what was in it until we were done eating it, but I remember being totally baffled.

This cake is light and fluffy and has all the perfect flavors. It is full of lemon flavors and is a little tart, but still perfectly sweet. The glaze over the top is soft and melted and it makes for a really delicious afternoon treat. I think it would go so well with a cup of tea!

After we finished eating it, our teacher told us it was made using 7 up! That is what gave it that amazing lemon flavor. I was mind blown. How could soda make a cake so good? But it was so, and I was not disappointed… instead, I decided to make it at home!

Hello, everyone! I hope this post finds you all happy, healthy, and well. Today, we are going to be talking about this fabulous green chile and chicken recipe. Boy oh boy, this is a party in a pan guys and gals! Or should I say a “fiesta” in a pan? The flavors that are in this dish really warm your mouth and belly with the essence of Spanish spices and ingredients. I love that you can eat this chicken in tacos, over rice, wrapped in tortillas, or just as it is. What is your favorite way to enjoy Mexican food such as green chile chicken? Let me know in the comments!

Make sure you set out all of your favorite taco fixings with this meal. I served it with salsa, refried beans, lettuce, diced tomatoes, onions, and sour cream. My youngest child was upset that there was no guacamole dip, so I noted this little discrepancy for the next time I make green chile chicken.

The honey kicks the sweet factor up a bit, and the lime adds a touch of tantalizing tartness. This fruit salad is perfect for taking to summer picnics, BBQs, and family get-togethers.  It’s easy to throw together and looks like a rainbow in a  bowl. What can be better than that?
