I started my year promising myself I would try to find leaner and lighter recipes. I’m not going on a diet, no way – but I thought choosing my meals and ingredients with a little more thought I could possibly shed a few pounds that mysteriously appeared around my waist during the holidays. I have no idea how that happened… But I’m pretty sure it had something to do with chocolate. Whatever the case, I’m determined to find my waistline again, without giving up any of my favorite dishes!

We all know how delicious lasagna is – unfortunately we also know that it’s not the leanest possible choice for a dinner. However, there is a way to make it a lot lighter by turning it into a vegetable lasagna. You don’t need to worry about the taste! The moment I had my first bite of this, I thought I might never go back to my old, meaty lasagna recipe again. This is sooo tasty!

Here’s a recipe that you are not going to want to put down. It is full of yummy flavors and the deliciousness of a plate of chicken alfredo, but it does not have the messy parts of eating it. Simple, tasty and totally delicious, this will blow your mind and make you bake it at least once a week.

 

My neighbor Anne came rushing over my house yelling, “here comes the best chicken alfredo you have EVER eaten!” She knows I love chicken alfredo, so she always brings me some when she cooks it. This time, I was baffled. She only brought a crock pot instead of her usual dish full of alfredo pasta with a side of chicken. When I looked in the slow cooker, I laughed and told her she must have forgotten what chicken alfredo looks like. She scoffed and said that she knows what she is doing and to pass her a plate. I gave her one and she served me a small square of this and then fed it to me. I was amazed. This was a plate of amazing flavors that I have always loved, but it is easy to eat in alfredo form. The sauce had a great taste and the lasagna as a whole did not disappoint.

Although this is not a new concept, it’s one that is not only quick and easy on a weeknight, but it also saves a lot longer than if you made lasagna in a casserole dish.  You can even freeze this soup, if need be so.

This easy recipe serves 8 people and is ready in about 30 minutes.  Serve with a dollop of sour cream on the top or a sprinkle of Parmesan for a little extra added flavor.
