This Flavorful Meatloaf Recipe Is As Easy As It Gets

Want to hear something funny? Before we had kids, my husband was a picky eater. Well, he didn’t cringe or complain about anything I cooked, but since he can’t even tell a tiny white lie with a straight face, I always knew when he wasn’t particularly fond of the food I was serving. He especially didn’t like meatloaf, but it took me a long time to figure out that was probably my fault.

You see, as a young wife I did not have that much experience in cooking, and I was using the first recipe I happened to get my hands on. I didn’t think it was out of this world, either, but I had no idea how to make it better. Still, I wanted to serve delicious home cooked meals so I started collecting different kinds of recipes and trying them out, one by one, until I hit the jackpot.

I still haven’t found the perfect recipe for some dishes, but I certainly have found one for meatloaf! This super scrumptious one, from Lynn’s Recipes is what we call Daddy’s Favorite these days – my husband and kids are crazy about it! I’m so happy Lynn shared it in her awesome vlog.

Attention, Please! This Baked Pasta Is What You Need In Your Life!

Some of my favorite meals are Italian.  I will eat just about anything that is pasta layered in gooey melted cheese.

Add in just about any type of sauce (I’ll pass on the spicy ones, though) and I’m in total heaven.  This dish right here is the perfect Italian flavors combined into one and makes for a completely impressive dinner. My husband and kids absolutely loved this recipe. In fact, they just couldn’t get enough of it. This baked rigatoni is a real keeper!

This meal here is completely amazing.  You take rigatoni pasta (already boiled to al dente) and then stacked on their ends in a round pan. After that, you take a delicious meat sauce and layer it so it falls through the little rigatoni and covers the top end.  Then, you layer that in cheese and bake it til it’s ooey and gooey over the top.  Simply the best.

If you’d like to get a feel of an authentic Italian meal, then this recipe is made for you. It is just as perfect for busy weeknights as it is for special occasions – this is actually my husband’s choice every time I ask him what he would like me to make for date night!

You Won’t Believe How Fast You Can Get This Done

Don’t you just hate it when it’s 100 degrees outside and you really, really crave for lasagna? Even if it’s not summer, sometimes I ditch lasagna from our dinner rotation simply because I can’t bare to think of all the hassle. All those pots and pans, and all that time! But the kids love it just as much as I do, so occasionally I just have to make it. Boy, was I glad when I heard there is an easy way to work around these issues – and it’s called skillet lasagna!

I know what you’re thinking; how is it even possible to make lasagna in a skillet? What about the lasagna noodles? Doesn’t this dish need a really long cooking time? Those were my thoughts exactly, the first time my friend told me about this recipe.

Believe it or not, you can get this lasagna done in 30 minutes! You heard me – you’re only a half an hour away from your favorite Italian meal, and it’s possibly even tastier than the traditional version. All the familiar flavors are there but you just don’t have to stress over the cooking process!

So Bright, So Light, So Delicious!

I love Mediterranean food. For example, most of the Greek dishes are very healthy, with fresh, pure and lean ingredients. Not to mention they are absolutely delicious! These stuffed bell peppers always remind me of my trip to one of the Greek islands, and I love the fact that I can now make something very similar right at home.

Although this recipe originally called for green bell peppers, you can use any color you prefer. When I’m making these for a larger crowd, I usually buy red, yellow and orange bell peppers as well. They look so pretty together, with all those bright colors!

This recipe is also perfect for anyone who wants to eat a little lighter. Choose lean ground beef or ground turkey, as well as whole grain brown rice. You can also use reduced fat cheese to cut down on those calories. These will still be delicious!

Well, folks, it’s that time a day again; dinnertime. It’s the point in the day where you realize you haven’t prepped, planned, or prepared anything yet. You don’t have time to toss a roast in the oven or fry up those pork chops you have in the freezer (keyword being “freezer”). What do you do? You make this fantastic casserole.

Tatertot casserole has been a family favorite meal in my household for years. It’s easy to make and very filling. My kids and husband gobble this casserole up like they are death row inmates savoring their last meal. If there are any leftovers, well, let’s just say they taste amazing the next day. All you have to do is brown the burger, toss in the veggies, and mix the soup to get started on this great meal.

Quick Tip: If you don’t wish to use ground beef, swap it out for ground turkey. I actually prefer using ground turkey as it produces less grease during baking.

That is huge for me because I hate soggy spaghetti noodles. This is definitely a supper that you get to set and forget until it’s done cooking. I always pair slow cooker spaghetti and meatballs with garlic bread and a side salad with Italian dressing. Very TASTEE!
