A Weeknight Meal Or A Special Occasion – You’ll Want To Have This Every Day Of The Week

Want to hear something funny? Until about three weeks ago, I had never even heard of cassoulet. If it doesn’t ring a bell for you, either, no need to worry. It’s only the best freakin’ meal ever! I am not kidding, it really is fabulous. I’m forever grateful to my friend for letting me know this awesome dish exists!

A cassoulet is a traditional French dish that contains beans and at least one kind of meat. You won’t be able to make it in 30 minutes, so if you’re looking for a super fast meal, you may want to save this recipe for later. But I guarantee; when you make this, it’s a meal you’ll never forget!

This recipe from Cooking On The Weekends has quickly become my favorite. I’ve already made it twice; once for my family and another time for friends that were staying overnight. Everyone loved it!

Every Mommy Should Know This Recipe By Heart

I can remember my mom making giant pots of ham soup when I was growing up. She’d start the soup in the morning and by mid-afternoon, it would be bubbling to perfection on the stove. My mom never cut corners and always soaked her beans overnight. Not only does soaking your beans allow them to regain their moisture and speed up the cooking process but it also helps aid in digestion. It’s a process that “sprouts” the legumes. Science, it’s amazing stuff!

Anyway, we will be taking a few shortcuts with this recipe because instead of the stovetop we will be making it in the Crock Pot. I love slow cooker cooking, don’t you? I’m always in and out of the kitchen so I don’t have to worry about soup boiling over on the stove. Yay!

The secret to this soup is adding in a ham bone. Now, you don’t have to do this but if you are able, please do! There’s just something about a ham bone that gives bean soup an uh-mazing flavor. Enjoy!

Oh, my, gosh. This stuff is amazing!!

The other day I was having a conversation with my friend about food. We discussed the difference between “kids’ food” and “adults’ food”.

Now, you may say that food is food, no matter what your age, but there are certain meals that kids in general don’t like. For example, my kids don’t like anything too hot and spicy, or a medium-rare steak. But then my friend suggested that there are meals that are meant for kids alone, and they are not “a real dinner” you can serve to adults.

I gave her a weird look and asked her to give me an example. You know what she said? Mac and cheese! I was so surprised that I didn’t know what to say for a moment! Mac and cheese is one of my favorites and I certainly make it for dinner all the time. But she seemed to think the dish is a bit childish – which made me want to prove her wrong.

Right then and there I started making this incredibly yummy mac and cheese that is not at all like the box stuff you get from the store.

Quick Tip: Do not use pre-shredded cheese for this – the flavor is much better if you shred the cheese yourself.

You may not need an entree when you have these tasty taters!

It is the season of tasty new potatoes and I intend to make the most of it! I love potatoes; new and old, and I think they make great entrees as well as side dishes.

When I was little, my grandmother used to make a potato soup that we simply called “milk potatoes”. And that’s what it was; new potatoes, onion and milk – it may sound strange but it was sooo delicious! We would eat and eat and eat, until our bellies hurt, and it was absolutely worth it.

Since then I have learned various new ways of enjoying new potatoes. One of my favorites is this recipe for roasted potatoes. Very simple ingredients but somehow the flavor turns out amazing every single time.

You can most definitely use this recipe for old potatoes, too, or mix red and yellow potatoes for a change. This makes a great side dish for pretty much any entree – I especially love serving these potatoes with salmon or chicken.
