This Is Just The Way My Mother Always Made This Casserole

It’s a funny thing, about food. On one hand, you want to try all these delicious-looking, new recipes that will bring you flavors from different countries and cultures. On the other hand, there are some recipes you never ever want to change; the ones that your mother or grandmother used to make, the ones that seem to be so perfect as they are. Just like this one. This awesome bacon and green bean casserole from Dining With Alice is almost identical to my mother’s recipe.

There’s something about this classic Thanksgiving side dish that is so comforting. Maybe it’s the familiar flavors that make you feel like home, or maybe it’s just the fact that this is so beautifully creamy and we’re used to having it during the holidays.

Whatever it is, it makes me want to serve this year after year – even though I always search for all the new and modern alternatives first! To me this casserole is enough to make any meal a festive occasion. Which is kind of funny, since there are no fancy ingredients involved.

How We Made This Meatloaf Will Blow Your Mind

Everyone loves meatloaf at our house and over the years I’ve tried an impressive number of recipes for it. Stuffed, with sauce, taco meatloaf, mini loaves – you name it, we’ve had it! I think if we had to have a vote, the stuffed meatloaf would be the winner. Which is no surprise – who doesn’t enjoy meatloaf with all kinds of goodness hidden inside?

However, there’s one thing that has bothered me a little, when making meatloaf. Somehow I always end up with a really messy oven, which means a massive cleanup operation for me. I think I’d rather have someone sticking toothpicks under my fingernails, than clean the oven! It’s one of those tasks I really hate.

Fortunately my friend told me about this awesome recipe – I had never even thought of making meatloaf in the crock pot! Silly me! It was one of those light bulb moments that make you feel bright and extremely stupid at the same time. Anyway, I’m just happy that I do have the recipe now, and this has become a staple in our dinner rotation!

My husband hasn’t been a big fan of pork chops. I think it has to do with the fact that his mother used to make them so often when he was a kid. Whenever I suggest pork chops for dinner, he gets this weird look on his face. And then he says he wants to cook a surprise dinner, instead. Haha! Well, I can’t really blame him. My mother-in-law is a great cook, but perhaps pork chops once a week is a bit too often!

 

The other night, however, I found this really tasty-looking pork chop recipe and I just had to try it. My husband was still at work so he didn’t have a say in it! I prepared everything (which is, by the way, a breeze with this dish) and waited until he got home. I poured him a glass of wine and told him we were going to have a special meal. His jaw dropped when I served the pork chops, but as soon as he took his first bite, he said these were going on our dinner routine!

This French Onion Chicken Noodle Soup Casserole is a simple but filling recipe that makes for good comfort food on a hectic weeknight. It requires just half a dozen ingredients and takes just half an hour to cook. Now, I don’t know about you, but I think a 30-minute meal is the bees knees!

 

Chicken noodle soup is practically the definition of comfort food – or the definition of comfort itself, for that matter. How many Chicken Soup for the Soul books are there now, 200 or thereabouts? Of course, you don’t want the same thing all the time. This casserole takes the classic yummy flavor of chicken soup and gives it a nice, refreshing twist. The best part is, this recipe works as a great base for any alterations, which you can make easily!
