It’s Impossible Not To Love These Cookies!

If you love cookies and pecan pie, you will adore this cookie – it’s basically both rolled into one! The cookie part is tender, buttery and a perfect vessel for the gooey pecan filling.

These will be great to serve during the holiday if pie making isn’t your thing. There’s a little prep time for chilling, but overall this is an easy recipe. Plus, once you take your first bite out of one of these darling little cookies you’ll be glad you took the time to make them.

I am a huge fan of pecan pie but my youngest son has a tree nut allergy. So, we usually don’t have pies and other desserts containing tree nuts in our house. Now, that he is older he knows he can’t have these things because they will hurt him so it is a wee bit easier to make a dessert such as a pecan cookie and keep them away from him. My son would never touch them anyway 🙂 I hope you enjoy these pecan pie cookies as much as I do!

You May See A Grown Man Cry When You Serve Him This Delightful Pudding

I made an incredible meal for my in-laws a couple of weeks ago. Did that sound like bragging? Sorry. I can’t help it – it really was incredible. I made this scrumptious beef stew with red wine and root vegetables, served it over rice with homemade biscuits, and when it was time for dessert I blew everyone away with this old-fashioned lemon sponge pudding.

My father-in-law fell in love with this the moment he had his first bite. He said it was exactly like the one his late mother had always made, and I was so happy I had been able to bring back those memories with a simple dessert.

When I say “simple”, I mean this is wonderfully easy to make. The flavor is far from simple, though – it’s like jumping into a lemony cloud of happiness! That’s what I love about old recipes; they never let you down. I’m so happy I decided to try this one, it certainly is our new family favorite now!

The Sauce Takes This Classic To The Next Level!

Do you ever get the weeknight meal blues? You know, when it feels like you’re just serving the same meals over and over again, one week after another. It’s totally ok not to make a restaurant quality dinner every day (or ever!) but if you could find a really easy way to do that, wouldn’t you want to give it a try?

This chicken parmesan with tomato sauce is exactly what you’ve been looking for. It is super quick and easy to make, the ingredients are inexpensive, and everyone loves the flavor! It’s not too spicy for children but the aromas are refined enough for anyone used to dining in fancy restaurants!

If you really want to amp up the flavor, you can use homemade marinara sauce. But don’t worry if you don’t have the time for it! This turns out absolutely delicious even when using store-bought sauce.

You can tweak the seasonings to your taste; I like to add a couple of cloves of crushed garlic when I add the marinara sauce, just to give the flavors an extra boost.

Try These Homemade Chocolate-Covered Marshmallows And You Won’t Go Back To The Candy Aisle Again!

I was a girl scout so I know all there is to know about different marshmallow brands, their consistency, sweetness and stickiness. I especially know which ones burn very easily! When you spend so many nights sitting by the campfire, these things become essential, haha!

Still, after all those years of marshmallow experience and expertise, I had never tried making marshmallows at home. Not until my friend served them at a party; these little pieces of heaven looked way too yummy to skip! I thought it would be a massive operation, and a very difficult one, to try and create homemade marshmallows.

It did take some time (especially because I got a little carried away and wanted to cut all kinds of different shaped marshmallows), but the process itself was surprisingly simple! And when you finally sink your teeth into these, with all that delicious chocolate on top… I don’t think I’ll ever be able to enjoy another store-bought marshmallow again.

On the other hand, I won’t put these anywhere near fire, either! They’re way too pretty for that!

Do You LOVE Cookies’n’Cream? Me, too

I was looking for something special to make for my daughter’s birthday, and I knew “your ordinary cake” wasn’t going to cut it. She is a picky little princess and there are only so many flavors and dishes she likes. She’s a big fan of cookies and cream ice cream, though, and at first I thought of just serving ice cream instead of a cake.

But I was worried about the weather – her birthday is in the middle of the hottest summer and I didn’t think it would take long until the ice cream turned into a melted mess. Fortunately, I decided to try this recipe and it turned out great!

I still can’t believe I hadn’t thought of making a cookies’n’cream layered cake myself. This was very easy to make, and I didn’t tell my birthday girl about this until I actually brought the cake to the table. She was so excited! She loved the cake and so did everyone else at the party. I will definitely make this cake again!

When I was little, my mother would often make us meringue treats. It was usually when she had baked something that called for egg yolks, so she had some extra egg whites on hand. You know, back then it was a big deal not to let any ingredients go to waste, and I think it still should be! Sometimes I’m amazed by people who seem to throw away food, simply because they don’t need it anymore – or because they didn’t know what to do with the leftovers.

But that’s a conversation for another time. My point is, I really learned to love meringue at a very young age, but I was always wondering if I could combine it with other favorites of mine.

For example dessert bars… Yum! I love any and all kinds of dessert bars. Lately I’ve tried different recipes for bars with berries and pie fillings. They are so delicious! I think I got an overload of chocolate at some point and I needed something different after all those brownies!

One slice just ain’t gonna cut it!

You’ve tried the lemon, you’ve tried Key lime, but have you ever tried an orange meringue pie? This is a pie my mother used to make every summer, and she got the recipe from her mother. We’d never have this pie any other time of year (although you definitely could!) For us summer was all about the fresh fruits and lazy, sunny days – and this pie brings back all those memories.

If you think all the citrusy meringue pies taste the same, o’boy you’re wrong! I’ve probably tried every variation of them out there, and this one is by far the most delicious. I can’t quite put my finger on it… but I sure want to sink my teeth in it, haha!

Don’t be startled by the lengthy list of ingredients; the recipe is very simple and it will not take you long to have this ready. (And it will only take a minute to have it in your tummy, trust me!) This pie is fancy enough for a special occasion, but you can definitely whip it up on a weeknight just to surprise your family with a mouth-watering dessert.
