Have you ever heard of chess pie? No, it’s not a pie crust filled with Velveeta or slices of waxy cheese.

It’s a heavenly dish filled with fluffy mixed eggs, sugar, milk, flour, and cornmeal. I also said “chess” not “cheese” hehehe! This pie is truly something special and you gotta try it as soon as possible. In my opinion, chess pie is a checkmate! Even my children liked it and they typically do not care for new things. When I said “chess pie” to them my youngest replied, “checkers?” LOL!

One of the greatest things about this chess pie is how easy it is to make. You simply whip the ingredients together and bake it in the oven for x-amount of time and there you have it! I Love It, You’ll Love It, Everyone Loves It!

I am a laid back, countryside kind of girl at heart, but occasionally I love to get a feel for “the city life”. I’m so used to small town living that whenever I visit a bigger place, I always find something new and fascinating. All the cafes, the traffic, the amount of people – I like to just sit down and watch everyone and everything go by. And that’s exactly what I was doing when I had my first ever slice of New York style white pizza.

Certain foods and flavors always give me a flashback, and this type of pizza is one of them. Whenever I make this at home, I remember that moment in the city – I even remember some of the people I saw crossing the street, having an argument or kissing each other goodbye.

These days I like this white pizza even better than any of your regular ones, with tomato sauce. In my opinion, this is a lot easier to make, too! It doesn’t take long to whip up one (or two, or three) of these and have a great dinner with your family or friends.

Quick Tip: Not a fan of ricotta? Try a combination of mozzarella and parmesan.

This afternoon, my family and I were starving and decided to go out and get some dinner. We were not sure what we wanted, but we knew we did not want our usual pizza dinner. We looked up some ideas online and fell short so we decided to just hit the road and stop wherever we see something interesting! Sometimes, the idea is marvelous and other times it fails miserably and we are left starving on the road.

This time, we did not fail though. We hit the road and within 15 minutes had found a lovely place to stop and eat! It was a new Mexican restaurant that served really yummy homecooked meals. In this particular restaurant, they had a few signature dishes that were served with every meal. One of those was a delicious sweet corn casserole ball with a little honey butter over the top. It was creamy, very sweet and perfect inside of a taco. The recipe I am sharing with you today is the one for that sweet creamed corn ball. It is light, easy and totally delicious. Quick Tip: Throw some fresh or frozen corn kernels in the mix as well.

I only ever notice cornbread when it’s being served as a side dish alongside cob and corn and vegetables. But even during such a moment, it’s always temporary. My focus always immediately goes straight to the roast chicken. I will pour gravy all over it and devour it with gusto like a hungry man deprived of food for days. The rest of the meal feels almost like a decoration until I decide that I might as well eat the accompanying side dish because I am still hungry. No offense to cornbread, but that’s how food life really is. The main star steals the show. Unfortunately, cornbread is just the supporting one.

But that’s not the case in this recipe that I’ve found over at Food.Com. It claims that this cornbread recipe is so good it doesn’t need other dishes to prove its worth.

Quick Tip: Tastes best when hot off the oven.

This dessert recipe has got me excited! I am a huge fan of southern pastries, and I gotta tell ya, these sticky caramel pecan rolls are simply divine! I just made them for my family yesterday, and I’ll be honest, we don’t have any left! They seriously flew right off the serving platter.

My daughter suggested that we top the rolls with vanilla ice cream, so I gave it a shot, and wow, am I glad that I did! The texture of the warm caramel pecan sticky roll mixed with cold ice cream really hit the spot. We may as well eaten these rolls for dinner because we certainly didn’t have room for the pot roast I cooked. So, yes, southern caramel pecan sticky rolls are the bomb, and I’ll be making them again.

Quick Tip: If someone in your house has a tree nut allergy, you can still make these rolls just leave the pecans out and swap them for raisins, chocolate chips, or leave them plain.

Cornbread comes to Taco Tuesday, in this truly inspired dish!

I always like to experiment with new flavors, and this knocked the socks off my family, let me tell you!

These are even more amazing with a dollop of guacamole and sour cream, if that’s your thing.

After all, ya gotta do-it-up!  You only live once!

If spicy is too much for you, then you can lay off the jalapenos and chilies.

I can hardly wait to make this again, and experiment with the flavors.

You can truly mess around with this one, and in my opinion, these waffles are good anytime of the day!

This recipe takes about 30 minutes to make and serves up to 4 people, and it’s as easy as pie!

The wonderful thing about this recipe is that you don’t have to add a Spanish flare.  It can be virtually anything.

The cornbread waffles are great even by themselves!
