I don’t know about you, my dear ladies and gentlemen, but when spring and summer get closer I always tend to look for recipes with fresh and tropical flavors.

Maybe it’s because I am so bored of the winter already, that I want to do everything in my power to get to the sunny days as fast as possible! I look for these flavors in every recipe, whether it’s an entree, a side dish or a dessert. And cakes are definitely no exception! The other day I came across this delicious looking cake recipe and I knew I just had to give it a try right away.

It certainly didn’t disappoint! This super moist and dense cake is supremely decadent – the toasted coconut compliments it well. The cream cheese frosting is sweet enough but not too sweet and brings a great balance to this dessert.

I could eat a whole one – and who says I haven’t..! We’d love to hear how many pieces of this delicious cake you had at once unless you’re afraid to admit you had more than one!

Oh. My. Goodness. You, guys, this recipe for coconut cake has brought me to my knees. Seriously, wowser! At first glance, I didn’t think I would be able to hack making this gorgeous confection of sweetened coconut flakes and soft cakey goodness, however, I surprised myself with my culinary skills, and you will, too!

 

This cake is delectable, beautiful, and fit for a bride on her wedding day. One glance at this coconut cake and you’ll be drawn into a scape of sweet dreams, ponies, baby rabbits, and rosebuds. I know I’m making it sound a bit girly, but don’t let that fool you, the guys will love this dreamboat of a cake, too! I know my husband and boys sure did!

And for my last share of the day I offer you a light, dreamy Southern dessert. You won’t be able to resist this!

This Southern Sour Cream Coconut Cake is a lovely twist on your classic white cake. It is super-easy to make, bakes in just 40 minutes, and is melt-in-your-mouth wonderful!

This makes for a lovely summer dessert option for your family or next party. And you know what? If I wasn’t married already, I might even consider making this my wedding cake! Yes – it really is THAT delicious, and I wouldn’t be surprised to hear someone had this at their wedding!

Sometimes, I get so caught up finding those wonderful appetizers, entrees, and side dishes for all of you beautiful readers that I forget to share all of those irresistible desserts out there.  This Southern sour cream coconut cake should not be overlooked.  You don’t have to be a master baker to put this one together, and it is so moist and refreshing!  The way it melts in your mouth, it is like eating a sweet piece of cloud.  I really was carried away by the flavor.
