Here’s the greatest chicken soup recipe on the face of the Earth, if you ask me! It’s not your usual chicken noodle soup, quickly made of chicken strips and frozen veggies. There’s nothing wrong with those, of course, but once you’ve tried this you know there is no going back to your old recipe!

The secret is to use fresh vegetables, a whole chicken, and to let everything cook together slowly in your crock pot. You might think it takes a lot of work to make this but you’re wrong. After you’ve chopped the veggies and seasoned the chicken, you can literally forget the whole thing until it’s dinnertime!

I often put this together in the morning before leaving for work and when I return, the whole house smells amazing! How all the flavors come together in the slow cooker is something unbelievable – and you know, this is one of those dishes that only gets better after a day or two in the fridge! This really is the comfort food of all comfort foods.

This Soup Will Blow Your Mind!

For some time now I have been trying to find a recipe that would fit all three of my “rules”. Don’t even ask me where I came up with the rules… I guess it’s all this hassle over the holidays that made me want to simplify my cooking as well as my whole life.

Anyway, back to the rules! I wanted a recipe that would be easy to put together and as versatile as possible. You know I don’t want to run to the store every time I am missing one silly ingredient! The other thing was that I wanted the dish to be healthy and light, preferably a little spicy, too. I want to get rid of all the chocolate that somehow got stuck to my waistline during Christmas… And finally, I wanted a budget-friendly recipe – something made with inexpensive or even leftover ingredients.

Ladies and gentlemen, this spicy chicken soup ticked all the boxes! It is so versatile you don’t even need exact amounts for the ingredients. Just adjust according to how much of these things you happen to have in the pantry, or how many people are coming over for dinner!

This is another great dose of Southern comfort, made simple with the help of your slow cooker. Other than a little bit of prep involved with making the dumplings (don’t worry, it’s not hard), this Slow Cooker Chicken and Dumplings recipe pretty much consists of dumping it all in and forgetting about it.

 

Mother liked to make a good pot of chicken and dumplings when the weather turned cold (well, cold for the South, anyway), especially when someone in the family was feeling a bit under the weather. And though it never seemed like that difficult a recipe, even cooked on the stove, it’s even easier made in the Crock-Pot.

I love slow cooker recipes and here’s another great one!  This Crock-Pot Chicken and Black Bean Soup is great for summer eating but sure to warm you up any time of year. I know I will be making this all the time during the cold and windy fall weeks!

 

Sometimes, a nice bowl of soup with something simple on the side is just what you need. And sometimes, you just want to be able to dump a bunch of ingredients in a pot and do your own thing for a while.  This was a really nice recipe, with a nice splash of festive color, for enjoying the waning days of summer, particularly on a rumbly day such as this one.

Good soup makes for great comfort food! Whenever the weather gets colder, I feel like a delicious, warm soup is in order. I challenge you to find any canned soup with the delicious flavor that this Creamy Chicken and Wild Rice Soup has.  And thanks to your favorite slow cooker, it’s very easy to make!

I ate all too much canned soup in college.  Though I was all too well aware that there were better things out there (Mother spoiled me with her great cooking), I often lacked the time or resources to do much else, and it was hard to beat a quick and easy bowl of soup for comfort.  I didn’t have a Crock-Pot then, either.  Believe me, I’ve tried every single canned soup out there – and not that many of them are tasty enough to even mention. Now, thank God, I do–and I can share this delicious recipe with you!
