This Healthy Hearty Chili is Both Filling and Delicious!

A recipe that you can just set and forget, this slow cooker chicken chili is makes for the perfect healthy meal.  Top with a dollop of velvety sour cream, and you ahve yourself a meal!

This recipe serves up to 8 people and is ready in about 3 hours, after cooking on low.  Don’t worry about having leftovers, they make for a great workday lunch, just make sure you don’t put the tortilla chips over the entire crock pot.

Known to be considerably lighter than regular red bean chili, this recipe is just as delicious and chili-rific!  Not to mention, this dish includes cool creamy yogurt.

This dish serves 6-8 and even though it is a slow cooker recipe, it can be ready in under an hour.  Serve with a fresh Ciabatta bread, or even a jalapeno corn bread to add an extra oomph.

If you like the hearty, savory flavor of chili, but you want something different from the usual ground beef-based recipe with kidney beans, consider this Slow Cooker Chicken White Chili. It is very filling and easy to put together. I do like the flavor of beef-based chili, to the point that it is a frequent staple in my household, but hey, I like variety, too. This chicken-based recipe is quite flavorful, and though it is a bit leaner, it’s really filling, too. The Crock-Pot made it really easy, as well.

 

I have enjoyed navy beans in the past, but I normally just had them the way I have most beans: cooked with a few herbs, spices, and bacon until soft. This is a much more creative way to make use of them. I also hadn’t thought of using chicken in chili, but variety is the spice of life, they say, and it turned out brilliantly.
