It’s even better than my mother’s recipe, and that’s something!!

Ahh, the good ol’ days! Back when we didn’t have a gazillion exotic ingredients to choose from, we used to make simple dishes such as this one.

Beautifully tender, stewed beef over brown rice – it doesn’t get much better than this! It’s the perfect dish for a rainy day when you can let all the flavors linger in the kitchen and fill up your whole house with pure deliciousness. I’m telling you, the aromas alone should be considered illegal!

You only need a handful of ingredients to make this meal, and most of them you’ll probably already have in your pantry. This isn’t a dish you can whip up in a heartbeat – no, you need to let this simmer slowly to reach those incredible flavors.

The secret to super tender stewed beef is to not use high heat; it will make the meat tough. With some patience you’ll get the most wonderful meal you can think of – but I have to warn you; you’ll be tempted to call this “ready” a little too soon, simply because the aromas are so inviting!

So Bright, So Light, So Delicious!

I love Mediterranean food. For example, most of the Greek dishes are very healthy, with fresh, pure and lean ingredients. Not to mention they are absolutely delicious! These stuffed bell peppers always remind me of my trip to one of the Greek islands, and I love the fact that I can now make something very similar right at home.

Although this recipe originally called for green bell peppers, you can use any color you prefer. When I’m making these for a larger crowd, I usually buy red, yellow and orange bell peppers as well. They look so pretty together, with all those bright colors!

This recipe is also perfect for anyone who wants to eat a little lighter. Choose lean ground beef or ground turkey, as well as whole grain brown rice. You can also use reduced fat cheese to cut down on those calories. These will still be delicious!

There’s this restaurant at the mall near our village that serves the best gumbo, but I have never considered eating at it. I love stew, but I have always thought that Gumbo is a type of really hot dish that has super strong flavors. I am not a fan of strong flavored dishes—they give me a headache. And I have very low spice tolerance. The spiciest thing you can have me eat is the hot and spicy chicken from a fast food restaurant.

Until my best friend experimented with a gumbo dish at my kitchen. She just invaded my kitchen one day, brought out her tablet and opened it to a webpage, and started using my ingredients. She even had the audacity to reprimand me for not having sausage during that time. Who told her to cook in my kitchen anyway? Ugh. Best friend privileges. But I have to confess that I’m glad that she did because I wouldn’t have realized that I was missing a really good culinary experience by not trying gumbo.

Step Out Of Your Comfort Zone And Turn This Traditional Recipe Into a Mouth-Watering Casserole That You’ll Absolutely Love!

Move over boring stuffed peppers (They aren’t actually boring, we love them!) because stuffed pepper casserole is in da house! Moms, dads, grandparents, and kids alike are going to fall in peppery love with this recipe. This dish contains everything you enjoy about stuffed peppers and places them into a warm and filling casserole. Experience the flavors of earthy red and green peppers, brown rice, and rich tomato sauce simmering together in a hot oven.

Mmm, I can smell the savory flavors right now as I type this! Seriously, I can as I have this casserole cooking in my oven right now. I can’t wait for dinner time! I’m going to serve this with a fresh, green salad on the side, and also some dinner rolls I made earlier.

I think I’m going to have to wear yoga pants after dinner, haha! But I don’t even care about that, because the aromas in my kitchen are sooo inviting!
