Make Ahead And Get Some More ZZZZ In The Morning!

The holidays are my favorite time of year. I love everything about it; the cooler weather, the family gatherings, the last minute shopping trips. But most of all, I love the food and cooking hearty meals for my extended family. Unfortunately, it’s not very often these days that we get to spend time with our favorite cousins, aunts and uncles. So I cherish every moment!

Which is why I like simple dishes that can be prepared ahead, so that I can focus on being with my family but still serve them a really good meal. This country breakfast casserole from McCormick is a great example.

Eight ingredients is all you need, and a quick 15 minutes to prepare. I like to make this the night before and then just throw it in the oven in the morning. Our guests will wake up to the delicious smell of this casserole baking in the oven, and all you need to do is pour yourself and them a big cup of coffee. How does that sound for Christmas morning?

What Are You Having For Breakfast Tomorrow Morning?

If you are as tired of oatmeal, toast or granola as I am, then you’re going to love this wonderful breakfast casserole recipe I’m about to show you!

This recipe certainly does have a Southern flair to it, though its hearty flavor can be enjoyed by people of all backgrounds, I think. This Sausage Biscuits & Gravy Casserole from The Tasty Fork is simple to put together, too! And I guarantee; once you’ve tried this, there’s no going back to your old morning routine.

Though I don’t indulge in breakfast often, at least not during the standard breakfast hours, my Deep South background certainly gives me plenty of tasty options when I want to do so. A good number of them don’t require much toiling in the kitchen at all, and some can even be cooked the night before and easily re-heated the next day, with no compromise in flavor. This savory casserole is just such a recipe.

The great thing about this casserole is that you can also serve it for lunch or dinner. I like to make a large enough batch to have some leftovers – in my opinion, this dish only gets better when reheated!

My husband and I are not morning people whatsoever. We hate getting up early and even more so, as much as we are absolutely starving almost instantly when we wake up, we detest making breakfast because it just takes so long. We have made it (an almost unhealthy) habit to get up, make our bed, throw on a t-shirt and shorts and head out to breakfast in our area. We’ll go to a Cuban bakery or a French café, but we never eat at home.

As of late, though, we’ve really been wanting to kick these habits. We are always spending so much money and eating really fatty foods that have made us gain between 10-15 pounds in the last year. It really isn’t helping our wallet or waists. So, as usual, I asked my best friend Pinterest for some help. And guess what? Once again, it did not fail. I found so many recipes, but my favorite so far has been this one. It is a sausage, hash brown breakfast casserole with every delicious flavor you would want to enjoy for breakfast. Now, I will admit, although it is cheaper, it does not mean it is healthier. It is still pretty fatty as well. But mmm, so so good!

breakfast sausage, corndogs, Cornmeal, maple syrup, sausage corn dog

As a corn dog lover, these have been on my mind quite a bit lately.  However, these aren’t corn dogs at all!  Not when you get to dip them in maple syrup!  These breakfast sausages are immersed in a crispy coating, for the ultimate breakfast dish!

This recipe serves 4 people, but can easily be doubled for a large crowd.  Serve with a side of home fries and grilled onion just to round out the dish.

I can be a bit picky about my breakfast food. Though I settle for the absolute basics when I have to, I really prefer something rather hearty and a bit outside the norm that isn’t too difficult to foot the bill.  This Southwestern breakfast casserole fits the bill nicely.
