I love a good spinach and artichoke dip. It is full of delicious creamy and cheesy spinach and the artichoke gives it the perfect crunch. The best place to get it, in my opinion is Chili’s. It is so delicious and the veggie tortilla chips they serve with it go perfectly when eaten together. I cracked up so hard the other day when I went to Chili’s with my sister. She’s 12 and beginning to get into the stage where she wants to eat healthy. So when we ordered an appetizer, she ordered the spinach and artichoke dip.

After the waiter left, I asked if she was not eating healthy anymore and she said yeah. I asked why she ordered that and she said because it is green healthy stuff. I had to laugh. This creamy cheesy appetizer was definitely anything but healthy, but it was certainly delicious. Well, we enjoyed it and even lathered on the chicken we ordered later. That is when I came up with the idea of making a spinach and artichoke stuffed chicken breast. It seemed like a perfect idea and after putting it together at home, I absolutely loved it.

A Healthy, Creamy, Yummy Casserole

Casseroles are rather convenient and often very flavorful, but not all of them exactly have a reputation for being extremely healthy. If you are looking for a health-conscious, veggie-heavy casserole with rich flavor and creamy texture, this Healthy Spinach & Artichoke Casserole is an excellent choice! This is also a great way to make your kids eat their greens – with a recipe like this, it’s not going to be a problem!

I like spinach raw, in generous amounts in salad, and boiled artichoke with some salted butter is a nice treat, to me. Not everyone is so keen on these vegetables in their basic or raw form, however, and after a while, they can be boring to eat by themselves. Easy solution: mix them together with some cheese and bake them in a casserole. Yummy!
