This Salsa Certainly Isn’t “Corny”!

My husband is a huge lover of corn.  My goodness, that man can eat it.  Whether it is on the cob, from the can, or if I peel it off myself for him, he will chow it down like water.  I mean seriously, I have seen that guy pop open a can of corn, drain the liquid, and then sit with that on the couch and eat it a spoonful at a time until it is completely gone.  He truly loves corn and will eat it on its own, with anything, on anything or in anything.  It is pretty crazy. Well, he has passed on his love of corn to our kids.

I am not all that much of a corn person, so I know it is definitely not from me that they get it, but these kids go crazy over a can of corn and want me to stuff it in their tacos, over their mashed potatoes, and in soup.

They definitely take after their father.  Well, after a long time of just serving it in their food, I thought to myself, “why don’t I make them all a corn appetizer?” And I did.  From there came this corn salsa.  They will chow this down so quickly, you wouldn’t even know it was ever there.

One of my favorite things to do is prepare an overnight casserole.  So often I have my grand kids over for the night and we like to spend the most amount of time with them that we possibly can.  We have so often wanted to spend the morning relaxing with them, when instead we are stuck in the kitchen making the kids a bunch of different breakfasts depending on what they like.  With a bunch of picky kids, it becomes difficult to really find that one dish that they all love. With that being said, we have experimented so much in finding our grandkids that one dish that they absolutely adore, that I think we have found it. 

The best part about it: it is a crock pot casserole dish.  I have never found such an easy breakfast dish to make that all my grandkids love so I was thrilled to come across this one. 

Better yet, this dish is so incredibly easy to make in the Crock Pot! That gives me more time to get on the floor and play with the kids, sing with them, or watch their favorite movies.  This is most definitely the best Crock Pot recipe I have found since it pleases everyone!

Carrot cake.  My one main sweets weakness.  I am not much of a sweets person.  I would rather waste all my day’s calories on a big bowl of pasta than a slice of cake.  I mean, what is better than a cheesy, full of Italian flavor, plate of carbs, right? Well, the other day my neighbor Molly invited me over to her house and proved me wrong.  She showed me that there is something better than a big bowl of carbs and it very well can be sweets.  And guess what friends? This is the very best!

Well, let me tell you, Molly and I both love to bake for our grand kids.  We spend our days baking away in the kitchen making chocolate chip cookies for Johnny and strawberry cupcakes for Ally as well as whatever her grand kids love.  If they all love something different, we make all of those items.

We love to make them happy and really please them.  Well, the other day, we found this recipe and knew our grandkids would not be fond of it, but we did.  We did what we have never done and stopped the grand kids baking production and made this for ourselves.

These amazing macadamia cookies are to die for. They are very simple to make, for one. You don’t need to hassle yourself or to stress yourself over about out of the blue ingredients or complicated processes. These cookies are extremely amazing and they’re not too difficult to create. If you are a nut lover, you will definitely fall head over heels for these macadamia cookies. Since I and one, and my husband is too, we are truly in love with these. Back when we were in college, we used to snack on these nuts because he always had a supply of these.

My mother-in-law always sent him macadamia nuts because she always said “they’re healthier than your chips, son”. I can say that they’re more delicious than chips too, but this is coming from someone who’s in love with nuts.

These macadamia cookies are perfect for afternoon tea with friends. My husband and I often invite our long-time friends during the weekend just to catch up. It’s also a form of “play date” for our children who are almost of the same ages. While they’re playing in front of us, we catch up with each others’ lives.

You will find that conversations with friends become more fun if you have tasty tea snacks to serve them. These macadamia cookies are perfect. I am sure that the cause of those smiles on your friends’ faces are not just from the conversation. Those round things on the platter may also have something to do with them.

These sweet sugar cookies are my family’s favorites. When I say family, I am talking about my own family, my parents, my brother and his family, and my relatives. It’s a classic cookie recipe that everyone just couldn’t get enough of. My late grandmother always made sugar cookies for everyone whenever there’s a reunion that’s being held in my grandparents’ house. She used to serve it to us kids with milk while she brewed fresh tea for the adults. Now that I am an adult, I love my sugar cookies with strong coffee. The smell of the cookie and the coffee just smell so good together.

During last family gathering, it was my cousin Joanna who baked the sugar cookies for all of us. Since her daughter was busy playing with my other nieces and talking about a certain tooth fairy who got her tooth in exchange of a dime, she had the time to make us the treat. I was busy chatting her up while she was in the kitchen.

She told me the story about the “tooth fairy” who really was her husband. My niece finally lost a tooth because of eating too much sugary treats. To placate her, my cousin and her husband told her about the tooth fairy. It’s still safe to say though that my niece wasn’t able to eat any sugar cookie that day.

The dentist forbade her to eat anything sweet for the next couple of weeks. And for a child, that’s not good news! But the good news is, I have a copy of the recipe for these sugar cookies and you can find them on the next page.

These orange cookies are the best thing that ever happened to cookies. Er… well, I can say that about other cookies as well, but I swear that these are truly delicious! The thing about these cookies is that it tastes sweet as well as tangy. The tangy taste of orange brings that burst of freshness amidst all the sweetness, which in turn will make you eat more cookies instead of overwhelming you. These orange cookies are a favorite of my friends. Every time some of them will go visit me, they always request for me to make these.

They also request for their particular brew which goes so well with these amazing cookies. My husband loves these cookies too. Whenever he arrives and finds me with these, he always gets the carton of ice cream in the ice box and gives himself a generous scoop of vanilla ice cream. He loves eating these cookies with ice cream.

The “it might ruin your dinner” does not really hold true with him anymore so I cannot stop him from snatching a couple of cookies or even four! Yes, he has a healthy appetite that can match that of the binge eaters. And yes, he does not get fat. My sons, for some reason, do not eat these cookies alone. But when served with a tiny scoop of ice cream, they can eat a lot.

We simply refer to this casserole as “The Winner” in our house!

My family loves when I put together a really good casserole for them.  You know, something that is filling, full of flavor and totally delicious.  With a house full of boys (my husband plus three boys of ours), we really have our hands full when making dinner and trying to keep the budget in check is really hard. The appetite of just two of them can easily blow through our monthly budget if I am not there to keep a close eye on it and make sure we keep it in check. In order to really stay in check, I have to make a lot of dishes that turn out to be cheap, but are really filling.

  I have found that the best way to do that is by sticking to casseroles.  Usually the ingredients are basic and filling, while the flavor and textures change and make them interesting.  Well, the other day my neighbor Anne had made a casserole and told me to stop by and try it.

She said her kids hated it because of how picky they were, but if I liked it I could have it. SCORE! I went on over and it was delicious and knew my boys would like it.  I was right, this one was a huge hit!
