A simple weeknight meal that’ll fill your belly and put a saucy smile on your face.

During reunions, we always have a family photo session. It’s one portrait per family; then there will be all aunts portraits, then all uncles, then all cousins, and then finally a picture of everyone. We all love pictures. When you go to any of our parents’ houses, the hallway is surrounded by everyone’s photos. Our house, in particular, is a living, breathing photo album.

We even have a table by the hallway mirror full of portraits. I know we can store photos in our very own social media accounts, but my family loves to print them so that everyone can look at them whenever we visit each other’s house. In this type of reunion where everyone just enjoys each other’s companies, there is a need for a dish that will satisfy everyone’s appetite.

Usually, it’s a pasta dish because no one will say no to a pasta dish. For me, the best one that’s always served is the classic spaghetti because it just reminds you of home. Spaghetti is like one of those old movies that never really grow old.

Pineapple is one of my fave fruits but my family doesn’t share my sentiments…until now!

I rarely make any food with pineapple on it. While I am a fan of pineapple juice, using it as a marinade for meat; pineapple is something that I avoid altogether. I have very few recipes with pineapples as the main ingredient, and I am not too confident in using it on meals.

This baked pineapple recipe is a simple dish that anyone can learn easily. It’s also a pretty versatile dish; you can add anything you want to it. It tastes pretty much sweet, but you can adjust the ingredients based on your family’s preferred taste.

My husband instantly fell in love with this dish. I served it to him for breakfast; something sweet for a change. He ate about three servings of it before he left for work.

My sons love this recipe too, most especially if there is a scoop of ice cream swimming at the top of this amazing main course slash dessert!

This is a one recipe that ALL children go gaga for!

Whenever we crave for a simple pasta, we usually don’t settle with spaghetti anymore. It’s a classic, yes, but it’s everyone’s favorite classic. In my family, we always have the simple spaghetti marinara at every occasion; and sometimes, we can’t help but look for something new. If it was only me, I’d settle for oil-based pasta. However, my twins aren’t fans of it, so I had to settle for something usual, but with a twist.

This cheesy baked ravioli is a perfect example of that type of pasta. While it has almost the same ingredients for a pasta bake, it uses ravioli as its main ingredient. Ravioli has a lot of flavors going on with it and that’s just perfect! For a typical Saturday, this is the perfect recipe for us. It’s simple to make and it’s really tasty too. I can’t ask for a better family dish for a peaceful weekend.

You’ll LOVE this impossible posole soup!

The only reason I describe this soup as “impossible” is that the flavor is simply unbeatable. This tortilla and hominy soup truly does have a taste all of its own. I couldn’t resist this soup even if I tried. You must follow the recipe as is or you won’t get the wonderful results.

If you’re up for something new and interesting then this posole soup is for you. I love how Mexican tortilla soup meets hominy. What a  great combination! Until now, I hadn’t heard of anything like this before. I know you’re gonna love this recipe.

Manhattan And New England got nothin’ on this Rhode Island clam chowder.

Until I came across the RB And Mandy blog I hadn’t heard of Rhode Island clam chowder. Let me tell ya, folks, I am dang glad that I did! This stuff is uh-mazing. It is more like New England clam chowder than it is Manhattan but there are subtle differences.

For one, you use A LOT of clams in this recipe. There are definitely way more clams than potatoes up in your bowl, I promise. I loved the texture of this chowder because it was anything but watered down by cream. Plan on making a very thick bowl of deliciousness.

“Go big or go home” is the motto of this larger than life sheet cake.

I may be a northerner but I’m very much aware of the delicious qualities of Texas sheet cake. Whether it be chocolate or vanilla this cake has won my heart over many times. It’s probably because I was born in Houston, TX. My parents brought me back to Michigan at 6 months old so I have no recollection of the Lone Star State.
