Hands Down, The Most Comforting Meal For The Chilly Nights

There’s nothing I enjoy more than a delicious, hearty soup on a cool fall day. I’m a big fan of this season – I like the cooler weather, the crispy air and the golden shade of autumn sunlight. What I don’t like is the fact that it gets cold inside the house, too. Which is where all kinds of soups come in handy. No, you can’t wear them (at least I wouldn’t recommend that), but a steaming hot bowl of soup will fill your belly and make you feel warm again.

My family doesn’t always agree with me, though! You know how it is with teenagers; I guess soup isn’t a very trendy dish these days. They would rather have tacos, burgers or lasagna – or something else I really can’t even pronounce correctly.

I was determined to make soup, anyway, but I wanted to surprise my family by turning it into something they would actually love to eat. Enter, this incredible tortilla soup!

This is such a brilliant idea and I knew immediately my kids would love it. And they did!

Ain’t Nobody Got Time For Kneading!

Ladies and gentlemen, here’s the busy mom’s or a lazy cook’s ideal recipe for homemade bread! Everyone knows how delicious homemade bread is, but let’s face it. Who has the time and the energy to do all that work for a delicious loaf? Not me, that’s for sure! Occasionally I bake a loaf or two, but then I just get back to my old ways and end up buying bread from the store. It just isn’t the same thing.

I have tried a few no-knead recipes, especially for dinner rolls. They’ve turned out tasty but I’ve been craving for a bread recipe that would be as easy to make as they are.

However, I’ve kind of had the feeling that those no-knead breads wouldn’t be very good. I was worried they would turn out dry – or even worse, hard as a brick. I was talking to the lady next door and she said she had just the perfect recipe for me. I had my doubts… but she convinced me to give it a try.

And guess what? This really is the easiest and tastiest homemade bread on the planet!

This casserole will make you want to grab your garlic bread and sit down with the fam for a nice hot meal of deliciousness.

I’m a mega fan of spaghetti but my husband hates it. He claims that his mother made spaghetti all the time when he was growing up so now he doesn’t even want to look at it. Hmmm. Well, that was a real bummer for me to hear because the kids and I love the stuff. So, what’s a good wife to do? Improvise, of course! I decided to make a spaghetti casserole and see if my husband would settle for that instead. I’ll be honest, he took one look at the dish and said, “Spaghetti, ugh.” However, once he tasted the food his spirits lifted and he actually thought it was quite good.

So, this creamy spaghetti casserole is a win for us all because the kiddos and I get our spaghetti fix and my husband gets a glorious casserole that he enjoys.

A casserole is a hodgepodge of flavorful ingredients that only mom can mix together.

Sure, any of us can make a casserole, but it takes a mother to lovingly mix it all together for the nourishment of her family. This Mennonite inspired casserole is made with lots of cream soup, noodles, and seasonings that will put all of your hunger pangs to bed. My mom used to make casseroles just like this for our after church meal and it was always something to look forward too. The house would smell so delicious with this food cooking in the oven. I can almost smell it now as I reminisce! What types of foods do you recall your mother making after church?

The original author of the recipe says to use high-quality cream soups as they are what gives the dish most of its flavor. I opted to use Campbell’s.

I love carrot cake. From it’s moist middle to the tiny bits of carrots that are in the mix. Yum!

Most of the carrot cakes that I’ve had are covered in cream cheese frosting and there ain’t nothin’ wrong with that! However, the following recipe calls for a carrot cake that is frosting-less. can you believe such a thing? I know, at first, when I heard of this recipe I thought some lady in some kitchen somewhere had gone bonkers. I mean, how on earth does one serve carrot cake without frosting? Isn’t that unheard of? Nope. Just wait until you try this recipe and you’ll see why frosting is overrated unnecessary.

Talk about a sweet treat! The cake is so moist and sweet you won’t even remember frostings name. All you’ll be focused on is gobbling up this delicious dessert.

A Traditional Amish meal that will put the zeal back into dinner time.

I absolutely love this recipe. The beef is tender and the noodles aren’t soggy.  Nothing is worse than mushy noodles and somehow these noodles tend to stay quite firm. They aren’t al dente by any means, but they also aren’t mushy, either. The flavor is something to be talked about as it is so savory! Seriously, the beef juices really make this meal the gem that it is. I love seeing a pot of this stuff simmering on the stove after church or when the weather gets cooler. You guys and gals are really going to be impressed with this recipe.

My mother used to make meals like this for church potlucks and everyone would gobble it up like nobody’s business. Mom had such a knack for making amzing meals.
