Lemon drop cookies are some of the easiest cookies I have ever made.
I will admit, I have made my fair share of cookies in my lifetime. My husband would consider me an expert in chocolate chip, oatmeal, sugar and peanut butter cookies. So, naturally, I figured I need to learn more different types to add to that list. Lemon was next so I decided to give it a go today and loved the results.
Lemon drop cookies can be made in many ways. Sometimes that just means dropping the cookie dough on a baking pan, then after it is baked glazing it with lemon frosting. Other times, it means making them more like a thumbprint cookie. That would be a doughy texture that then has a little well in the center where you add the lemon filling. Either way you make it, you will see that these are positively amazing. They are light and refreshing and go great with tea or coffee. These can be eaten at any time of day and honestly, kids tend to love them. I would have never believed that kids would love something that does not have chocolate, but it is true. These were a hit.
