This one is going to sweep you off your feet! It’s not very often that I manage to make something I think is better than my mother’s, let alone my grandmother’s recipe, but I have to say this lemon meringue pie gets pretty darn close! It’s soft, creamy and fresh; everything you want in a summer dessert. Although I would be quite happy to enjoy this year round!
If you’re short on time, feel free to use a store-bought pie crust for this. The yummy filling and that gorgeous meringue will make sure this turns out super delicious, no matter what!
This pie serves approximately 6, unless you are like me and eat half of it on your own, as soon as you get your hands on it… That’s why I would recommend making two pies at once. One for you, and one for the rest of the family!
If lemon is not your favorite, you could try adding orange or lime instead. In fact, that is my next mission – I’m going to make a lime pie using this recipe!
