Be The One Who Brings The Best Cake To The Party

This is a poke cake, which means it will always turn out wonderfully moist and delish. Basically you could use any flavor for the Jell-O gelatin; I bet this would be absolutely delightful with lemon, too! Strawberry was my choice this time, mainly because of the color.
You can easily double the ingredients and make two cakes if you’re serving a very large crowd. Now that I made the test cake, I’m tempted to make two for the picnic, just so we could all eat more… This is also a very inexpensive choice for a dessert – easy on your wallet but so rich in taste!
Ingredients
1 (18 1/4 ounce) package white cake mix
3 egg whites (or as mentioned in the cake mix)
1 1⁄3 cups water (or as mentioned in the cake mix)
1⁄3 cup oil (or as mentioned in the cake mix)
1 (5/8 ounce) jell-o sugar-free strawberry gelatin
2 cups boiling water
1⁄4 cup sugar
1 (16 ounce) bag frozen unsweetened strawberries
16 ounces Cool Whip or other whipped topping
Instructions:
Follow directions on box to prepare the cake in a 13×9-inch pan. As soon as you remove the cake from the oven, poke holes in it with a fork.
In the meantime, mix the gelatin with 2 cups boiling water, stir well to dissolve. Cool slightly.
Pour the gelatin over the cake, making sure you pour some of it in all the holes, and chill until set.
Combine sugar and strawberries, mix.
Top cake with the strawberries, juice and all, then whipped topping. Decorate with a few extra strawberries.
Refrigerate until ready to serve.
