I love lasagna. It is just the ultimate comfort food if you ask me. It is filled with great delicious flavors, has layers of perfectly cooked pasta, a lot of red sauce, a good dose of ground beef and if that is not enough, it is layered with loads of ricotta, mozzarella, and parmesan cheeses. It really cannot get any better than that. It is the perfect dose of everything to make the best pasta dish known to mankind. This is so incredibly easy to make, I make it at least once a week in my home.
Well, I have found another incredibly easy, different, yet equally delicious lasagna recipe to make. Now before you think what I did was eliminate the noodles for another type of pasta, that is not what I did. Actually I took away the pasta altogether. Yep, that’s right, there is no pasta whatsoever in this lasagna and that is exactly how I like it! Flavorful, full of texture and really delicious, this is a sweet potato lasagna! It still has all the elements we know and love of a good classic pasta lasagna, but it is better, because the sweet potato add the perfect consistency and sweetness.
