My husband hasn’t been a big fan of pork chops. I think it has to do with the fact that his mother used to make them so often when he was a kid. Whenever I suggest pork chops for dinner, he gets this weird look on his face. And then he says he wants to cook a surprise dinner, instead. Haha! Well, I can’t really blame him. My mother-in-law is a great cook, but perhaps pork chops once a week is a bit too often!

 

The other night, however, I found this really tasty-looking pork chop recipe and I just had to try it. My husband was still at work so he didn’t have a say in it! I prepared everything (which is, by the way, a breeze with this dish) and waited until he got home. I poured him a glass of wine and told him we were going to have a special meal. His jaw dropped when I served the pork chops, but as soon as he took his first bite, he said these were going on our dinner routine!

Is This The Easiest Enchilada Recipe Ever?

I’ve probably mentioned this before but I really love traveling. Whenever I get back home from a vacation, I get into this mood that I call “post vacation blues”.

I feel sad, sorry and frustrated, and I know there is no other cure than to start planning for another trip again. Well, in an ideal world we would all have plenty of money and free time to travel anywhere, anytime. Unfortunately I still live in a reality where I need to work for a living, and I’m only able to take a trip about once in two years. So what can I do in the meantime, to make the post vacation blues go away?

Food is the answer to so many problems, this one as well! I have started to cook a special dinner once a week – I pick some of the countries I’d love to visit, and choose a recipe that is common to their cuisine. This way I can pretend for at least one night that I am on vacation, in an exotic place, and it makes it much easier to wait for my next trip again!

This Is The Perfect Meal For Busy Weeknights!

Want to know what time I got up the day before? 4:20am. I’m not joking!

My schedule has been crazy full for the past couple of weeks so I’ve really had to forget about lazy mornings and get right into business, instead. I try to get as much done in the early morning hours, to make sure I’d have some time for relaxing in the evening. Now, my idea of relaxing consists of a glass of red wine, knitted socks and a good movie – NOT slaving away in the kitchen for several hours!

That’s why I am so happy about this recipe. It’s so simple I laughed out loud when I saw the ingredients! How come I hadn’t thought of this before? I guess somehow we tend to think “a proper meal” means a huge bunch of ingredients and at least 2 hours of prep time. Well, you’re not going to have to worry about those with this recipe. The meal basically cooks itself!

So Yummy, You’ll Never Go Back To Rice!

What’s your favorite side dish? I’m sure we all love a wonderful potato dish but those can be a little tricky for us who are trying to avoid having too much carbs.

It’s the same thing with pasta noodles and rice – I really enjoy both of them but I wouldn’t want to have them every single day. However, there is a delicious and healthy alternative that you may not have heard of! And it’s so simple to make you won’t even have to turn the oven on!

Cauliflower rice (or rice cauliflower, as some call it) is absolutely delish and a great low carb option that pairs really well with almost any entree. I had heard of it quite a while ago already, but somehow I had completely forgotten about its existence. Until last week, when I was searching for new side dish and my friend mentioned this one to me. It seemed so easy to make, I just had to give it a try. I’m so glad I did!

I woke up one day to a call from Andy, asking me to come to their house to ask my opinion about something. I thought it was an emergency so I just brushed my teeth and drove straight to their house with my heart pounding a little. She did say she was asking for an opinion, but what if she was goingto file a divorce against my brother?! But then I was welcomed by my excited niece who told me that her mom was waiting for me in the kitchen. She said Andy was making something delicious in the kitchen. It was then that I immediately realized that I overreacted about the call. Obviously.

When I arrived in the kitchen, Andy was making these frosty things, at least that’s what I thought they were that time. She only corrected me when I called them cheesecakes that  I learned they were a batch of Neopolitan fudge. She said she would make them for the little princess’ upcoming birthday party (which I almost forgot about. Bad Aunt!). Oh my goodness. They tasted really divine. I didn’t even know what to say when Andy asked me what could be improved. I became curious though and asked her where she got the idea from. She led me to this site called I Am Baker where I found the complete recipe.

George doesn’t like anything that’s not sweet. Not that he’s allergic, but he just doesn’t like the “plain” taste (that’s how he often describes it). His wife on the other hand loves anything that’s not as sweet. And she loves the “plain” goodness that George doesn’t love because she easily gets tired of pure sugary goodness. George is one of my cousins whom I am very close to since we’re kids. He’s quite a nice guy too, so unlike Rob who’s still a prankster. Just don’t test his hatred for bland tasting food because he’ll hate you forever. Kidding!

His wife attempted a lot of methods just to get him to eat something that’s not pure sugar. Too much sugar is good for the body and while George is healthy as a horse, he needs to start looking after his health because we’re not getting any younger. His wife’s most successful attempt is her mother’s old family recipe of pull apart biscuits. She modified the ingredients a bit because some of the ingredients in the recipe were a bit impossible to get in groceries, but they tasted great. I knew because I was there when his wife served it to him. I witnessed how he actually closed his eyes in pleasure as he chewed on the really delicious biscuits. Well, wife, one point for you!

My godson wants to be a chef someday. I didn’t understand why at first because he didn’t show any interest in becoming one. If you love to be a professional cook someday, wouldn’t you be interested in for example watching your mother cook or at least watching cooking shows? My godson didn’t want that. He even easily got bored whenever his mom asked him to stay in the kitchen and watch her because she couldn’t look out for him if he’s not in her sight.

The first interest he’s shown to cooking was when he tasted my best friend’s noodle pudding. He was so mesmerized by the noodle becoming a dessert that he started asking my best friend how it happened. I told you what I thought of as a kid, and I think it’s the same for the kids now—a noodle was just a noodle. When it became something other than “a noodle”, expect questions from them. Ever since, my godson has been curious about my best friend’s recipe. I think he just needed a trigger to make way for him to express his real interest. Well, I’m expecting great things from him. And probably a few free meals to his restaurant. Godmother privileges!
