This Dish Makes Me Want To Move To Ireland

When the winter brings on the colder temperatures, I always notice a change in my favorite recipes.

Of course there are some dishes I love year round, but there are seasonal favorites, too – in the summer I love to use fresh berries and fruits to make special desserts, and the fall is the perfect pie making season. Winter always makes me crave those spicy, steaming hot soups and stews, as well as slow cooked meat.

There’s nothing better than this lovely corned beef that has been cooking to perfection in the crock pot for several hours! Served with cabbage and pearl barley, as well as the most delicious sauce ever, you’ll get a meal that will keep you warm through the cold winter night. This dish is all about the pure flavors and it doesn’t need much seasoning, but you can always spice it up if you’d like.

I started my year promising myself I would try to find leaner and lighter recipes. I’m not going on a diet, no way – but I thought choosing my meals and ingredients with a little more thought I could possibly shed a few pounds that mysteriously appeared around my waist during the holidays. Every now and then you feel like having a nice dessert. I don’t mean after your meal – I mean having just dessert instead of your lunch! What? You don’t get that feeling? Well, I certainly do. And the only way to get rid of it is to make a quick and yummy dessert before your husband gets home and realizes that’s the only meal you’ve had all day. Last week I was feeling a little under the weather. Maybe I caught a bug or perhaps I just hadn’t had enough sleep – whatever the reason, I was tired and cranky and I didn’t feel like cooking at all. Don’t you just wish you had a personal chef when that happens? People keep talking about personal trainers but I would definitely rather hire a chef!

Anyway, trying to avoid the fact that I was going to have to cook something eventually, I started searching online for easy recipes. I didn’t really care what it was, as long as I didn’t have to go to the store to get the ingredients, and as long as it only took me a maximum of twenty minutes. Lucky me, it didn’t take long until I stumbled upon this one. Sometimes it amazes me how you always seem to make the most delicious and comforting meals from such simple ingredients.

These stuffed shells make my heart beat a little wildly out of sheer anticipation.

Everyone in my household highly regards Italian dishes like pasta, pizza, and stuffed shells. My husband loves these meals too but he hates ricotta. In fact, my neighbor’s husband hates ricotta, too. What’s the deal with husbands hating on ricotta? I personally think the stuff is uh-mazing! If you have a husband who hates ricotta, never fear. You can replace it with cottage cheese, instead. So, see? This recipe is versatile and works for everyone because it is just that awesome.

I have to admit that I love ricotta and made a smaller pan of this delicious dish for myself using the creamy and ever so dreamy cheese. I just couldn’t help myself. I really don’t understand my husband’s aversion to ricotta cheese but it is what it is. Enjoy!

This dessert isn’t only easy to make and yummy to eat but it’s pretty, too!

Just look at the picture. it’s a like a tropical vacation in edible form. I think I might take a close up of my deep dish fruit pizza and make it my computer’s background wallpaper. LOL Seriously, though, you’re gonna want to make this deep dish fruit pizza. it’s really good and it’s a bit on the healthy side. Imagine that. A dessert that’s actually good for you. This dessert is a win for moms everywhere.

My husband really liked this deep dish fruit pizza, too. I made mine with strawberries and kiwis as those are his favorite fruits but feel free to pile on any fruits that your little heart desires. I think peaches, mangos, and grapes would be a good choice to dabble with.

Homemade oatmeal cream pies give Little Debbie something to be nervous about.

Why do these little guys have to be so ding dang good? Seriously! These oatmeal whoopie pie are ridiculously amazing! I love how great they taste and how easy they are to make. Now, for a bit of clarification. I understand that some parts of the country call these whoopie pies while the rest calls them gobs. They are the same thing and they both taste great. Debate, over 🙂 If you like Little Debbie oatmeal cream pies you are going to LOVE these oatmeal whoopie pies.

They are the cat’s meow, the black bird’s crow, the horses nay, and the millionaire’s pocket. They. Are. Good.
