My son is very picky when it comes to food. Sometimes it drives me crazy to try and figure out what to cook, besides the hotdogs that he would eat. He likes instant noodles a lot and that is why I have been looking for something with noodles, to satisfy his “delicate” appetite. A nice, hearty casserole sounded like a very good idea, now that we’re into the colder months of the year.
I found this Chicken Noodle Casserole recipe and it is such a lifesaver! My son actually loves eating it and it’s one of his favorite dishes now. I am just so happy that he is eating something that’s good for him, and something that he actually loves. The Rotisserie Chicken, as recommended by Holly, really works wonders with this recipe. You can also use leftovers from a previous meal since the recipe needs pre-cooked chicken. You probably won’t believe it but you only need five minutes to prepare this dish!
