The best part about this meal is how absolutely easy it is.  You can certainly use fresh veggies, but save yourself some time and use frozen chopped vegetables for an even faster experience.  Or, go ahead and chop all your veggies well before you plan to make the rice to make the cooking experience a lot faster and easier.  It’ll give you more time to enjoy your meal with your family and friends.

 

This dish is especially convenient when you have a large get together or simply want leftovers for the week.  It is easily doubled or tripled with no change to the taste or final results.  Make this in a very large pot and be sure to keep in mind that people will want seconds and maybe even thirds when you’re deciding how much to make.

 

Ingredients

For Shrimp Sauce:

1 cup Hellman’s mayonnaise

3 tablespoons Domino white sugar

2 tablespoons Nakano rice vinegar

2 tablespoons Land O’ Lakes melted butter

3/4 teaspoon McCormick paprika

3/8 teaspoon McCormick garlic powder

For Fried Rice:

3 tablespoons Land O’ Lakes butter, divided

2 eggs, whisked

2 medium carrots, peeled and diced

1 small white onion, diced

1/2 cup Bird’s eye frozen peas

3 cloves garlic, minced

salt and pepper to taste

4 cups cooked and chilled Royal rice

3-4 tablespoons Kikkoman soy sauce, or more to taste

2 tsp Kikkomani oyster sauce (optional)

1/2 tsp Kikkomani toasted sesame oil

green onions, thinly sliced for garnish

cooked protein of choice

 

Directions

For Shrimp Sauce:

  1. In a small bowl, combine all the ingredients and mix well.
  2. Mix well.
  3. Cover and refrigerate for at east 30 minutes before serving.

For Fried Rice:

  1. Heat 1/2 tablespoon of butter in large pot until melted over medium high heat. Add egg and cook until scrambled, stirring occasionally.  Transfer eggs to plate before slightly done and let them finish cooking on their own. 
  2. Add another tablespoon of butter to the pan and heat until melted. Add carrots, onion, peas and garlic.  Season with salt and pepper.   Sauté for five minutes until veggies are soft and cooked, being careful not to bring butter to a burn. 
  3. Increase heat to high, add in the remaining butter (or more) and stir until melted. Add in the rice, soy sauce and oyster sauce (if using) and stir until combined.  Continue stirring for 3-5 minutes until rice is fried, being careful not to let it burn or stick to the bottom of the pot. 
  4. Add in the eggs and choice of cooked protein. Give it a good stir, remove from heat and lastly add the sesame oil and stir.  Serve warm.

Quick Tip: Make sure the rice is cold before throwing it in the pan to fry.  It definitely gives a better final result.  Also, make sure not to just toss the rice in and take it out as soon as it’s warm.  Actually, fry the rice.  It certainly makes a difference.
