Let Me Tell You Right Now, This Is The ONLY Lunch Salad Recipe You’ll Ever Need
Are you bored of your regular lunch salad recipe? The same one you’ve brought to work every other day for the last year? I know the feeling. But there’s no need to worry, because I’ve also found the solution!
This chicken salad is super versatile and really quite easy to prepare. I used the Greek yogurt and some low-fat croissants for mine only because I am trying to eat healthier, but I bet this recipe would be crazy good with some of my homemade mayo.
Also, I am not a huge celery fan, so I used pickled okra in mine to replace the celery. It was really good – or if you like celery keep this as is! This is a great pre-made lunch to take to work because you can make large batches and it keeps well. You can change the flavors so that you won’t get bored – and you’ll save a bunch of money when you don’t have to go out for lunch!

Would be better with grapes and walnuts or pecans.
I have always read where a salad with mayonnaise in it should only be kept for a few days in the refrigerator so making large batches would not be recommended unless you were serving lots of people and wouldn’t have too much left over.

Pretty good recipe but I dislike yoghurt so I use lite mayo. I also leave out the carrots.
